    1 can kidney beans
    1 dry coconut ( for the milk)
    3 stems celery
    1 scotch bonnet pepper (optional)
    1 onion
    3 stems approx. married man pork or ( sweet basil )
    6 stems scallions
    2 leaves of broad thyme (Puddina )
    1/2 tbsp. cook-up seasoning
    4-6 ochros ( okra ) (optional)
    some fine thyme
    cassava casareep
    salt to taste

    Very nice and easily done, we were thought to fry the meat separately and add later after the rice has been half cooked or almost done.
    This way is much better !!!

    Nice. Instead of adding more casscreep at the end add some tomato paste. I also add carrot and callaloo to mine😀

    Great cookup video! I normally add a can of coconut milk and the heat to low covered....just to save on too much work😃
    Last 15 mins I add some frozen okra(Canada) and add some sweet peppers and carrots and also a can of chick peas....I think you added casreeo... I will definitely add that next time ! Thanks great foods!

      Yeah, such a shame 😔, their doesn't seem a way to post pics to utube. Some techno people should think about doing this.🤔. I made a cookup the other day with cow peas, beef, a carrot, spinach, and a few ochroes, simply delicious, hubby told me not to give away any, as I normally do.😃

    Guyanse folks are fortunate, because East Indian cooking is way hard and much more spices and taste. But this is like so simple easy, I am from Pakistan, this would be called Pilou, which has about 10 spices and quite advance ways to make this dish. But once you taste the East dishes, it leaves a impression. But I really like the simplicity of west Indian foods:)

      Yes Guyanese food is not as rich and strong in flavor as the Indian original dishes. That is because lots of the ingredients for the original dishes are not available in Guyana to this day.
      So those who came here from India back in the days recreated the dishes with what was available here.
      This dish is still called Pilou in Trinidad and Tobago, but not in Guyana,.

    Hi Guys!
    I enjoyed watching your Pepper Pot, Cook-Up Rice, stuffed Karela recipe very much.
    During my first visit to George Town many years ago, I tried Beef Pepper Pot (Very fiery stew with Beef) at a restaurant.
    I used to have Cook-Up rice at a hotel "Water Cress" where I stayed, I think, is located at at GT as well.
    This is the first time I watched Pepper Pot made up of pork, and boy, it looks so delicious with the kind of dark glaze on it.
    You guys have explained the recipe very elaborately, making it easy to follow step by step!
    I have one question:
    What is this stuff in the bottle labelled "Cassava Casareep" at 1 : 35 which is dark in color and having thick consistency?
    What is it made up of and what is the purpose of using in your above recipe? What are its uses in Guyanese cooking?
    I miss Guyana and the few warm friends such as Mr.Kallicharran, at the GT port, his daughter Liza, wife and many others who accommodated a stranger to your country.
    I even remember saying Hi to Mrs.Janet Jaggan, while i was crossing a street in GT.
    Your country, having such small population, with so many natural resources has a great potential to develop in farming, agriculture, nature and adventure tourism as well.
    Nice to see the malls in your videos, but I enjoyed watching the fish market the most!!

      Cassava Cassareep is used for it's bitter sweet flavor and also its preserving quality. It is made from the ground provision Cassava. The juice of the Cassava is boiled until it reduces to the thick Casareep, it is flavored with salt, sugar , cloves, cinnamon and pepper at the time it is being made
      It is used mainly for the bitter-sweet flavour and the preserving quality (having food without having to refrigerate it for days sitting on the stove only to reheat every morning) in the case of Pepperpot
      It is also used for coloring other dishes like Fried Rice, as a browning for a darker color to the dish.
      Cassava Casareep has been around for centuries.Just Google it and you'll be amazed, it's also an Antiseptic, lol.

      We blend and store it in the fridge.
      The green color is a chemical reaction with traces of copper in the water. since we used to keep it in the fridge that would happen from time to time. It is safe to consume, read this: www.quora.com/Why-does-my-fresh-garlic-turn-green-when-cooked We are using freshly minced garlic now to avoid this.

    I love your recipes. Makes everything simplified. Thanks. I do use CC a few times to check that I'm hearing correctly but some of the translation is incorrect and foul language. Please check for yourself.

    I know fresh coconut is better, but if in a rush could I use canned coconut.. or would u suggest cococnut Creme? Sweetened?

      Canned coconut milk is ok, you dont't need the creme🙂

      You can even use tin beans and packet coconut milk. Sometimes i use that when I'm in a rush to get to work

    Didn't see when you add the cook up seasoning..my black eye was soak overnight but should i boil abit before using it
