And did you use fan mode while baking ?

Hey Sugar Bean, I have a question: what does double boiling the egg white and sugar do? I noticed in another video you do it with macarons too and I've never tried doing that 🤔

she probably uses them for other desserts that don't use egg whites like creme brulee, egg tarts, custard, etc

I was wondering if these can get any stiffer? I once overbeat meringue and it became super dense and another time I overbeat this recipe and it turned out puffy and foamy, but I’ve tried these and at this stiffness they make this shape well but can’t hold icing tip shapes like stars

How do you store them after baking. Mine started to melt after I took them out at room temperature
In your last swiss meringue video, at your description box, i read 2 ingredients.... Ones use almond powder and sugar powder and the other only use white egg and sugar.

@@SugarBean 저 오늘 바로 슈가빈님 레시피로 해봤는데 성공했어요!! 테프론시트에서도 잘 떼지고 바삭바삭 맛있어요😊 근데 제 오븐(가정용 빌트인 오븐)이 문제인지 구움색이 좀 나왔네요ㅠㅠ 좀 더 낮은 온도로 구워보면 될까요?
설탕을 휜자에 녹이는 다음에 식혀야 되나요 아니면 바로 채찍 하나요?

Sugarbean, may i ask what you do with all your leftover yolks? i use a lot of eggwhites making almond bread, macarons and meringues but there is only so much custard i can use, and pasta i want to make. I'd love some ore ideas. Lately, out of desperation, I have begun using yolks and water to dip schnitzels in but i have so may frozen yolks, some with a little sugar, others with some salt in my freezer....
