    1. You should be using guanciale. You’re in Italy; it’s very easy to get it there. If you’re anywhere outside the Italy, fine, but that isn’t the case here.
    2. No cream allowed in carbonara!
    3. Pecorino is the only acceptable cheese to use (unless you can’t get hold of it, but surely you can get it anywhere, even outside of Italy).
    4. You don’t use parsley in carbonara.

    Carbonara is made with pecorino not parmesan and guanciale not pancetta

    James is my favourite chef, but dear god 🙈The key ingredients are pancetta and Parmesan??? No they’re not. Not at all. CREAM?!?!? Try Guanciale and Pecorino James. Italians all over the world will be screaming at this mess. One of the worst carbonara videos I think I’ve ever seen, and it pains me to say it as I really like James. I know it’s supposed to be ‘his take’ on a carbonara but it’s not like he’s just substituted one ingredient for another - the whole recipe has been changed. It’s the wrong meat, wrong cheese, wrong type of pasta and he’s added cream!

    Just watching food network and james Martin in doing Xmas special. however hes making Naan, and Prawn Curry? Wot gives? Why dont they just get an Indian to make this and being Christmas it should be curry free!

    indeed carbonara no cream, but it does look delicious, why do we always need to use the classic names and then make something else? make the recipe you want and give it a name, how do you think the 'carbonara dish ' got it's name....
