Instant Fermented Banku / Amokple recipe using A 100 year old trick ✅ Fermented Corn & Cassava

  • 3 years ago I shared my Cornmeal & Gari Banku recipe and I remember in the comment section somone mentioning White Vinegar.
    Prior to the comment left Mum had suggested I add Vinegar when I had no fermented Corn dough to my mixture.
    I have since used this process and served many guests who have loved it.
    If you’re in the diaspora and want to enjoy your Banku then this recipe is for you.
    INGREDIENTS
    300g of Corn Meal
    160g of Tapioca Powder
    Water 420ml
    Organic Apple Cider Vinegar 80ml (if you’re using White Wine Vinegar - 40ml)
    Salt to taste

    I use both lemon and apple cider vinegar to soak my plain corn meal to reduce starch; leave it covered for two days; put it in the fridge for a week or days. I live in the US and have used this method to prepare my banku for 20 years. The only drawbacks you have to eat it immediately after cooking it.

    Malt vinegar is what I usually use and it always works great 👍🏾....
    You are also right on the wisdom of our ancestors and how they knew to formulate recipes.

      Thank you. Fufu is different from Banku. Fufu is made with Cocoyam, Yam, Cassava and or Plantain.

      If you already have your fermented Cassava and Corn dough you don’t need to use the Apple Cider Vinegar

I have an induction hob but will get the adapter if needed. Also if you could stock Wegba/asanka, I would like one. If too heavy with shipping costs that make it not worth ur while, please let me and will find another way 😊

      Tapioca powder is available on Amazon. The traditional Banku is great, this is an alternative if you don’t have time to ferment your dough. This process mimics the taste and texture of Banku

    Corn and cassava are horrible for your body. But it makes sense that you have to ferment it first! That's an excellent idea, that's how you get all the nutrients from the vegetable and you're able to process it and break it down in the body.
