All my country is beautiful, full of great incredible places to ride. You should come to Chihuahua we have Sierra Madre mountains and famous Copper Canyon (4 times bigger than Great Canyon at CO) , dunes desert, valleys, lakes, extinct volcanoes just down the border with NM, the Zone of Silence in the tri-state border with Coahuila and Durango, everything but the sea, you can take the Chepe train to Sinaloa and get to Pacific Ocean at least.
