I have a solution for your anxiety for playing in online chess against better people. Simply put a little blackout on top of their name. So you can't see who you're playing against until after the game. Since your entire anxiety is because of whom you're playing against, it would be logical to remove that out of the equation. You will literally have to play every game as if it was Schrodinger's cat. You will play with the knowledge that you can both be playing against the best and the worst players. And with that you will have nothing to be anxious about, because you will come into each game with the same mentality. "It's just a player."

No, you took the wrong conclusion. If the time wasn't there, they'd be playing completely different moves, so you can't conclude that the draw would've been there without time being there, as it would be an entirely different game.
