      @@ThomasDeLauerOfficial I, like Singing, am also glad to have found your channel. I am not on a Keto diet, but I am on a low-carb diet and try my best to eat clean. I love how you go into so much detail as to how foods work in our body and that you also talk about what food cause inflammation and what foods have anti-inflammatory properties. You are helping me improve my eating lifestyle and I thank you so much. I also love how you seem to be more down-to-earth and not pushy. You speak to people from where they are and even let those of us who are not on Keto of their options and what foods are low-carb and good but not Keto or what things are OK to eat when you "cheat." That says a lot. You seem to really care about people and understand that we are all human.

    I feel like I am becoming a food scientist, just to keep up with sneaky despicable tactics of food labeling and shady unethical food marketing!! It takes me 3 times as long to shop because I can’t trust any brand anymore (some have changed ingredients on me) and must read every label!

      I learned this long ago while shopping for pet food. My rescue dog had seizures until I changed his food from what I thought was decent (Purina) to the really good stuff (Solid Gold).

    Love dairy so thanks! Ate lots of quality cheeses,ghee, butter and organic heavy cream while loosing weight and maintaining. I have years of experience making cheeses and other foods with milk; dairy snob. However, I learned new stuff here and came to fuller understanding on other things. Headed out to find some Good Culture cottage cheese. Paneer is easy to make at home; fresh cheese curds. Advantage is you can fry it golden in ghee and add it to veggie dishes. You can also press it overnight with heavy weight to leave far less whey! You can add cream to raise the fat ratio. You can control the quality by using organic, whole A2 milk or goat's milk. It's simply milk heated and curdled with acv or lemon juice, curds lifted out of the whey into a cheesecloth and pressed.

    FYI, the Daisy brand of Cottage Cheese and Sour Cream are clean ingredients....just cream. I don’t work for Daisy, I am simply a housewife, 64 years old and l appreciate your information to help us find the best and healthiest products on the market. Thank you for all you do!

      amanda Tkids I use both. (Depends on how strong the coffee is! Haha) I do use half & half for my chai, along with coconut milk. Full cream doesn't work well for me in chai, though I do also melt about 1T butter (Kerrygold or Finlandia) & 1T coconut oil to mix the chai into so I start my day with fats. (Like the "Bullet Proof Coffee.") Keeps me going for hours before I get hungry!
      Word of caution, though, do NOT buy anything that is high-heat pasturized! Read the labels & cartons on EVERYTHING you buy. If you see "ultra-pasteurized" or "HUT" on a pkg, walk away. It's a totally dead food with NO nutritional value. Even the proteins are destroyed. High heat pasteurization process destroys everything in the milk, and it's actually a "shelf stable food product" after that. You only see it refrigerated because in America we wouldn't buy dairy in a carton sitting on a shelf--we're programmed to know that real foods require refrigeration to preserve them. Stores use valuable refrigerated shelf space in order to get us to buy it not knowing what we are actually buying! Low-heat, small vat pasteurization process is best, since we're not allowed to buy a real food--unpasteurized dairy. Some small dairies still use that process over the more common medium heat method. Read labels, look up dairies your local store carries (& avoid big box or chain stores! Shop small & local!), contact them for more info if you're unsure of something from their website. We must do our due diligence on what we are buying and eating! ☺

    I wonder why you never mention Daisy brand cottage cheese?? It lists only 3 things in its ingredients: cultured skim milk, cream and salt. I started eating this after I saw that what i thought was the best tasting cottage cheese was full of stabilizers, thickeners, etc. I add Himalayan salt, ground ginger and I moisten it with heavy cream; this is my breakfast. I could not afford to do this with the "good" brand of cottage cheese which is the highest cost in the dairy case!

      When I eat cottage cheese more often than not it's daisy because of the "only 3 ingredients". He's probably leaving it out because the milk (I assume) they use is "GMO grain fed/factory farm raised" milk.

    I try to emphasize A2 dairy: A2 half and half, goat cheese, manchego (sheep) cheese, pecorino Romano (sheep) cheese. I also look for grass-fed cottage cheese like Good Culture, especially the 6%.

    Sour cream made from cream salt culture is better than cream. The culture eats up all the sugar. I am so used to the low carb content that it doesn't particularly taste sour to me; but pleasant. I keep my healthy Omega 3s up too!

    Amazed once again about food quality in US. In Europe sour cream is just milk and bacteria, just like Greek yogurt but with more fat... 15 to 35%. Cheese varieties are insane and almost all are clean, milk and starter cultures.

      There's a ton of "clean" food in the USA if you actually look through the options. If you don't read the nutrition labels and don't research the producers, sure you might stumbled into an unexpected content, but that's on you. That said, the fidelity and veracity of labels in Europe is often questionable too, so don't be deceived.

    Since eliminating most of my dairy intake ( yogurt, most cheeses, creamers) I feel so much better. I still make sure I get my calcium, but boy, my overall energy is a notch higher than before. I also look way leaner.

      yes, 2 meals a day, 10am to 12 & 5-6pm, intermitent fasting. bacon & eggs, chicken & broc, a burger, macademia & walnuts, dark choc treat, aerobic exercise, 4x workout per week. Just seems like it makes us see food as just fuel to live, boring and repetative after weeks versus the very bad sugars, grains, flavorful cheese and dairy. I did juicing smoothies before keto, felt better, but that is still natural sugars. Reminds me of 68 yr old Skip Ballis , the sportcaster, works out 4x per week, chicken and boc every day, feels good and energized but sees food as body fuel, done quickly then moves on to the days stuff. how about listing your meals for 3 days, short and sweet instead of just telling us to do our homewrok with so many keto choices, overwhelmed by all thses people who are very correct about keto, but most often, with hours and hours of review before we get a comprehensive life style

      @@timpeacock9820 Hi Tim. I will have it on a plate of food as part of a meal and have little bits with mouthfuls of other foods like meat or asparagus. Or at the end of a meal as a little add on if I am still hungry I will have 50-100 g or so on its own plain, I do like the taste. If not for being strict keto at the minute I would put it on oatcakes or some sort of cracker. Maybe your son would like it more if it was with something like that. You could still get away with one or two oatcakes or crackers and still stay within keto guidelines. It is a slightly tart taste, if he is young his taste buds might not like it. You could try different brands. I have had a few I am not keen on. I live in the U.K and Morrisons supermarket sells a welsh goats cheese I really like so that's the only one I have been buying recently.

    I make my own yogurt with A2 milk and added heavy cream. It sits to culture for a minimum of 14 hours.
    A year ago there were 3 stores nearby had it. Now Target is the only place carrying it.

    If your not lactose intolerant, what’s wrong with grass fed, grass finished a2 raw milk? Yeah it might have sugar, but I personally think it’s a good trade off with how high in nutrients it is.

      Absolutely right. The A2 milk promoted in the video is UHT pasteurized, much worse than even regular pasteurization. Raw milk has double the amount of glutathione, much more CLA, even has the enzyme lactase, making digesting milk easier for those with lactose issues. Not to mention it’s a probiotic with diverse bacteria.

    If pepper jack has peppers in it I think it automatically counts for cheese “food” because it’s still above 51%

    Good thing that my parents in law have a neighbor close by that has about a dozen cows. We get all the grass fed milk we need like 30 minutes after it's been milked out of the cows (usually in the evening between 18.00 to 20.00 depending on the season). We also make the cottage cheese and yoghurt out of this milk, it's quite easy.

      I can't find a cream without extra ingredients! Unless it's an organic brand that's well over $4 for a tiny carton.

    All pasteurized dairy is tarah, doesnt matter if its a2, a1 or grass fed..

      is it though, there are things like enzymes that the raw meat eaters push.. I still wold wager a lot of problems come from quality too. I mean when you go Kerry gold, you dont go back hehe

      What? The texture and color of kerrygold's butter is nothing like a real raw grassfed butter.. Pasteurizing denatures proteins, raw butter and raw cheese (not heated) will always be crumbly.

    I don't use milk, and I do use cream, high fat yogurt by Siggi's, natural cheeses, all natural sour cream. Love those.

    I hope can answer my question. I’m a 56 year old man and recently by following a keto diet I have lost 35lbs so far. I started at 270 and I am about 234. I want to go down to 210. Because I lost weight so quickly...my body hasn’t “caught up” or shrunk. I Carry my weight in my upper body. Can you please explain how when one loses weight fast how the body shrinks? If you have done this....thank I’ll look for it. In addition, thank you for sharing your knowledge, and encouragement with all of us. Keep up the good work! I found you video! Lose skin and fasting.     If anyone has any problems with actually buying cottage cheese, it's pretty easy to prepare in the house with quality milk and acids like vinegar or lemon juice. Boil the milk till it curdles with an acid, after that strain it through a cheesecloth and squeezing all the liquid and whey out and then [optional] overnight you can hang it over the sink or a vessel so that any remaining liquid dries out. The next day all you have to do is cut it into squares and put it into any dishes or salads you wanna eat. Putting salt is optional, never felt the need for that though.

    I prefer daisy sour cream and cottage cheese. Fage now makes a 5% Greek yogurt and it is very good with some blueberries on top.

    Thank-you for talking about A2 milk. Please do a video about how A1 casein is more of a bad food for cancer then A2 casein. Also how Greek yogurt from A1 milk is actually bad for people who have cancer issues because of how much more A1 casein is in a single serving of Greek yougurt verses a single serving of whole A1 milk. Interesting info coming out about A2 milk. Glad to see someone is taking the time to talk about it.

      I switched to A2 milk about 2 weeks ago, and I had pretty severe prostate issues that required me wearing a Foley Cath for the past 9 months. Overcame it with a 7-day dry fast. So far so good. I’m curious to see if the A2 milk causes any problems, if so then I’ll stop drinking it.
      BTW I use the milk to make Kefir.

    Great to have all this info, Thomas... I haven't tried cottage cheese since I was a kid and probably the same reason I didn't like ricotta was the texture, but it might be time to give it a try again!
    I was also surprised that there weren't any other specifics on heavy cream... I've been using it ever since I started keto, 4 years ago, but more recently started looking for brands that came from grass-fed cows hoping for more micronutrients, Etc. I'm still not sure if there are those higher quality ones like grass-fed butter or even beef?!?

    No Pepper Jack cheese! OH OH!!!! Looks like, for me, Cottage Cheese and Sour Cream are the only two kinds of cheese that will be the only things I eat as far as cheese goes. The other ones you said are good, I don't like. I am glad that heavy whipping cream is good because I do like it in my coffee.

    I just found a cart selling raw milk, grass-fed, organic and non-organic. I bought a small bottle of buttermilk, butter and a small jar of ghee: I tried to make some of my own ghee but it wasn't very good and too time-consuming.
    Cottage cheese is a byproduct from making fresh cheese: once you have drained the whey, you can reheat the whey at a higher temperature, until the "leftover protein" in whey forms clumps. These will turn into cottage cheese. (I make my own cream/ farmer's cheese but haven't been very successful with the yield of cottage cheese. Perhaps it is because I ferment the milk, doing away the need for rennet?)

    An important thing to remember which Thomas didn’t mention is that liquid fats can be used by endotoxins in your gut as a transport mechanism to your blood. I cut out cream from my diet - I used it nearly every day - and replaced it with fattier cuts of meat and cheese. I feel much better now, so maybe skip the cream and opt for the good cheeses first!

    The problem is A1 Casein... I will buy cottage from buffalo milk. If you make an IGG exam to know about yours intolerance foods you will see the buffalo milk is zero intolerance, always.

    1 cup of Cow Milk has a very low glycemic load(2.7), so it won't spike your insulin, how can't it be a keto friendly?
    I mix it with half scoop Optimum hydrowhey it tastes so good, I take whey in half scoop basis to not cause gluconeogenesis and waste the protein into fat(protein->carbs->sugar->fat)

    New England Journal of medicine just came out with a new review article dated 2/13/2020 on Milk and Health. Interesting findings and an easy read. Makes sense that we are all getting fed the idea we need dairy for bones from big brother and the countries with the highest calcium consumption has the highest incidence of declines in bone health.

    Does sheep’s milk cheese have caprylic acid ? How about the k2 content of those cheeses? Is Parmesan cheese a good source of k2? I think raw milk products are the only way to go!

      Yes, sheep's milk cheese does have similar amounts of caprylic acid than goat's milk cheese... Almost any cheese will have considerable amounts of vitamin k2 in mk4 form... The mk7 form is almost only found in great amounts in Natto

      What is your experience after 6 months? I get bad eczema when I consume dairy. I need to test myself with goatmilk and I am curious about A2. I can tell if my face starts turning red, but if it does not, I don't know if there is less dramatic inflammation elsewhere in the body and brain.
