Also, I don’t throw away the peelings from my veggies anymore and I enjoy them so much I’ll peel veggies just to make them and it beats sweets any day!

I actually have time to cook them today - I just throw them into a pot with water and let it cook/reduce for about an hour. Then I store the liquid in bottles in the freezer and always have awesome broth for soup or stews at hand 🙌👍

Finally someone agrees at least a little that green bell peppers are just underripe berries picked too soon. Also slight correction adding oil to a pot of boiling water won't coat the pasta(it's coated with water that repels oil) but it does break the surface tension of the water allowing for a high heat boil, without it boiling over as easy, which makes the cooking process both faster and with less friction of the pasta rubbing against itsself releasing more starch and causing more sticking

One thing I like to do with tomato skins when I'm making homegrown tomato sauce: I set them aside, chop finely with some herbs and garlic (usually basil, sage, rosemary, maybe some thyme), fry the mix in olive oil until it's dry and crispy, then add back in to the tomato sauce I'm reducing. It adds SO MUCH flavor!
Loved this longer video! Excellent tips! I dont have a gas stove and inlove roasted peppers! If inwant to do a lot, i use my broiler, if im doing 1 or 2 i use my air fryer! To skin my tomaties, i freeze the, when they defrost, the skin peels off!

Hey dude, I subbed to your channel a bunch of months back because your content is great, and I love your positive attitude! I'm not vegetarian, vegan, or a healthy eater. I don't garden. I recently picked up a juicer in an attempt to increase my daily veggie intake because I have a health condition that I've never really tried to do anything but throw medication at. I've always thrown out the fiber after juicing my fruits and veg, but this time I held onto it and froze it in servings for later use. I plan to make the celery/kale/spinach/broccoli fiber into omelets/fritattas/meatloaf, and the carrot pulp into muffins/quickbread. Thanks for doing what you do, you really inspired me to try something new!

For anyone who doesn’t know what blanching is, that’s what he’s doing to the tomatoes at 14:45. You can do the same with peaches and other fruits. Use the blanched fruits for cobblers, pies, preserving, etc.

I just found your channel and it's great! The first tip is even quicker if you spoon the stock paste into (silicone) ice cube molds - they will pop straight out after freezing and there wont be crumbs etc trying to cut up the big frozen lump of it😊
I love learning tricks like these. So glad I discovered your channel. Another fun thing I learned is that Lemon peels can also be jarred with just pure sugar to create a citrus oil preserve known as Oleo-Saccharum which when mixed with some carbonated water already makes a great softdrink. But is also very useful in cocktails.

You are just the best. I recover glass juice bottles from my daughter's work and I use them for my flour, lentils, quinoa etc and they look great. Jam jars get reused too. I use handmade crochet bags for when I buy fruit and veg. And I am learning so much from you😊

You seem like such a humble human being. As a vegetarian I tried some of your recepies, it’s delicious savory food and dishes you make.
For number 17 I've learned from Kenji Lopez that you could just slice the tomatoes in half, pulp side on the largest holes in the box grater, pulping the juice while leaving the skin on. Plus the tomato skin could double as a guard while grating!
So inspiring! Got hooked on your videos, passion and knowledge a few weeks ago when I heard you say that "waste is simply a lack of creativity"! Genuinely inspired to not only change how I do things in my kitchen but would love to implement it in a social food project, as there's so much waste yet still so many hungry bellies 🫠. I have jars of tomato powder, brassica stem powder, garlic powder. Add to everything I cook. Love the idea of the dessert balls. I could gain so much weight if I ate what you cook!

Just another tip regarding peppers , when you have chatted them put them into a sandwich/freezer bag for 3-4 minutes and the skin will come away even easier. This happens due to steam that gets trapped in the bag. You could also use a small lidded container.

Using (organic) banana peels alongside the banana to add to a cake batter is a very good way to use "less" bananas to a recipe while still getting practically the same result. The peels are also pretty good pickled and used in a variety of recipes.
