Pinon (pine nut) grows wild where I live and it is still super expensive! I never thought of putting pinon in porridge or soup. I might have to try this one! Thank you!
Same! I guess they're hard to harvest. I'm hoping to plant some piñon trees in my yard this next year, and if I'm lucky I would be able to harvest a little from them myself... but probably not a whole lot I'm guessing from only two trees, lol.
I’ve been making Maangchi’s old 잣죽 recipe from 2011 and it’s so delicious! I make it for my elderly mom and she loves it because it reminds her of her mom.

I started making maanchi's recipes with her seaweed soup after having my baby 4 years ago. Now we eat the seaweed soup together at least once a month and have added leeks and mushrooms to it. Can't wait to try this recipe with my little one, she can maybe help me cook it to, it looks child friendly.

The basic method/logic of soaked rice and nuts blended together is an excellent way of adding lots of different nuts to your diet if you struggle to eat them. Great way to boost your vitamins! I'm thinking of making one with rice, almonds, chestnuts, walnuts, pinenuts and a tablespoon of honey to test. Then maybe I will add more different nuts. Perhaps even a small amount of oats for texture. I'm getting lots of ideas! haha Thanks Maangchi! and Happy New Year!
Ooh chestnuts!! You could make a sweet christmassy version with sugar or honey, and add spices like Ginger, nutmeg, etc if u like them!
@@katyb2793 I had exactly that in mind already lol Rice, nuts, honey, raisins, currants, sultanas with ginger, nutmeg, cinnamon etc. might be a bit too rich and ruin the whole idea though.
But rice and different nuts with a touch of honey seems the best balance.

I meant that I was going to mention the spices and such but limited my initial comment to just to keep things simpler lol
Pine nuts taste great with some varieties of mushroom too, so I'm thinking this could be a great base for someone wanting to do dairy-free cream of mushroom
The Christmas idea can work I think if you keep the spices simple and don't add too much? Maybe just some ginger and cinnamon
Rice + pine nuts + water + Maangchi's magic = pure porridge ❤️

I love learning the health benefits of Korean dishes! Also, I firmly believe that all of the healthy ingredients...seafood, seaweeds, vegetables, multi-grains, korean peppers hot and mild, soybeans, mung beans, pine nuts and jujubes such as in this recipe, all contribute to the overall healthy disposition of most Korean people! I am so happy that I've learned so much from Maangchi! As an American, I would never have put all of these healthy ingredients into my body if it were not for the wealth of learning shared joyfully by you! Thank-you!
