Sayur Asam Ikan Patin Khas Banjar -- Sour Catfish and Veggie Stew

  • This delightful, well spiced, slightly spicy, tangy soup is a great showcase for what can be done with whole catfish. (Ikan Patin, aka Dory, is a freshwater catfish in Indonesia and Malaysia).
    This fish soup reheats extremely well and is, if possible, even better the second meal.

    Recipe (Serves 4-6):

    800g catfish (up to 2 lbs). Cleaned well and with heads and tails attached.
    juice from 2 limes
    600g long beans (can use green beans instead), cut into pieces
    600g cabbage, cut into large pieces
    4 roma or plum tomatoes, cut into 8 pieces per tomato
    2.5L water
    2 cucumbers, peeled, seeded, and cut into pieces
    2 stalks lemon grass, bruised
    1 red chili, sliced
    2 inches (5cm) fresh galangal root
    (ground spice paste)
    2 inches (5 cm) fresh turmeric root
    1-2 red chilies (optional)
    6 Indonesian shallots or 1.5 European shallots
    4 cloves garlic
    2t salt (adjust to taste)
    2t sugar
    A bit of shrimp paste (to taste)
    5 candlenuts
    Clean the fish well and soak in the lime juice.
    Grind the spices together to a nice paste.
    Boil water while preparing the veggies.
    When the water boils, add the lemon grass and the galangal (f not adding it to the crushed mixture).
    Add cucumbers and let cook for a few minutes. Then add the tomatoes, beans, and chili pepper.
    Add spice paste and stir well. After a couple minutes taste and adjust salt in particular.
    Add fish and lime juice mixture, stir and let the fish cook through.
    Add cabbage and let cook 5 more minutes, then serve hot.
