Matthew, a way to gauge the amount of water is to ensure that your batter isn't so thick it's difficult to dislodge from your spoon. Conversely, it shouldn't be so thin that it runs all over your pan when you put a spoonful in. So find that middle ground by adding your water a little at a time.

I don’t know what Dorett meant by ‘chicken oil’ and I dare not ask her🤣 but Jamaicans usually fry the skin and batty of the chicken from chicken back parts to make chicken oil

Matthew here's a recipe for you to try. Only four ingredients. Equal quantities by volume, of:
Ripe tomato(es)
Firm ripe plantain(s)
Avocado(s)
Plus some tomato ketchup.
Method:
Peel and cook the plantain in water, boiling it for about 20 minutes. After the plantain has cooled chop it into small pieces roughly half-inch to three quarters of an inch in size. Cut the ripe tomatoes into the same sized pieces. Also peel and cut the avocado into roughly the same sized pieces. Combine all three foods in a bowl. Add a little more ketchup to the ingredients than the amount of mayonnaise you would add if you were doing a salad. Cover the bowl securely and slowly turn it so that the ingredients gently mix together.
The result is a tasty, sweet and sour, creamy delight.

I just tried the tomato fritters. Turned out good but I think I could make them better with more seasoning. I used Adobo, black pepper, onion, tomato, garlic powder and baking powder/ flour. Any other suggestions 🤔
