That was a fantastic demo. As I like a large thick slice I would prefer the long knife. If I wanted to put melon into a fruit salad then I would go for the last one as it cubed so easily.

I think for the set that came with a pair to make cubes, you're probably supposed to use the one with 4 blades in one direction, then use the other one to split them into cubes. Using the 4 blade one both ways probably cut the cubes into odd shapes.
