Tripe a la mode de Caen -- An amazing Norman culinary gem

- Although I normally don't like tripe, I have had a lot of great Norman food so decided to try this one out. I was quite surprised. The tripe is mild yet rich. This is something everyone should try.

Recipe (Serves 2 or 1 if you are hungry enough)

500g or 1lb tripe. Normally this is made from mixed tripe but I got white honeycomb tripe, and that's ok.
Water for boiling
3 shallots
2 cloves of garlic
1 clove
100-200ml neutral vegetable oil like peanut oil
30g butter
salt and pepper.
Some calvados (maybe 50ml)
500ml of cider (yes, I added more partway through).
Herbs: 1 bay leaf and one sprig thyme, though you can do a boquet garni of thyme, bay leaf, and parsley.
Firm flesh potatoes.
Cover the tripe in water and boil for 10 minutes, Then strain and set aside.
Chop your shallots and garlic together and set aside.
Heat your oil and butter together in a heavy lidded saucepan or stovetop cassarole pan. When hot add the shallots, garlic, and cloves. You can add the bay leaf and thyme at this stage too. Brown for 5 minutes. Add salt and pepper.
Add the tripe, stir in. Add the cavados and deglaze or flambe. Stir in the cider. Cover and lightly simmer for 3 hours, checking every hour to make sure it doesn't boil dry (add water if you need).
Boil the potatoes for 15 minutes. Scrub under water to peel. Cut into regular pieces and top with the tripe and juice. Eat hot. - Jak na to + styl
Cool video! Not sure why I was recommended this, but it was fascinating to see some of the culture of this area of the world. Props to you for eating tripe!
