You said that it takes 50 seconds between Blocking and Forwarding. Am I mistaken, because in your demonstration, it doesn't take 50 seconds for STP to re-converge following a change?

Those timers are true of CST/802.1d spanning tree. Around timestamp 1:29, he mentions that it's defaulting to using MST instead, which is acting more like Rapid spanning tree, which has much faster reconvergence times.
