    I appreciate the authenticity of this video, she burns the eggs a little bit, which is something anyone would do at home. The videos where everything looks "picture perfect" seem unattainable without a lot of trial and error or culinary experience. This is something I would try to make and not get upset if it does not turn out like the professionals made it. The omelette is perfectly imperfect.

      i’m sure she could make it a lot better if she wasn’t explaining steps and stuff. i love this tutorial because of that she doesn’t rush too much thru the information and sacrifices burning her food so that we can learn 🥰

      Ditto!! That's exactly how my eggs always turn out while trying to make all these types of omelets, burnt, torn, half cooked....real life, not professional chefish. But the video is perfect in her presentations. I will give it another try.

      For anyone looking for a tip to avoid burning, turn the heat down and have a little patience. The eggs are burning because they are getting too hot but eggs will cook through at surprisingly low temperatures

    Guys I have a really good tip for if you have friends that don’t like sweet things, and prefer savoury! I made this today and it worked out well, I still used 2 eggs, a (slightly big) pinch of salt, 2 tbsp of water, and 1tsp of mirin, but I changed the sugar to 1 teaspoon, and added 1 tablespoon of garlic powder. The first layer was normal, the second layer I put cheese on top of the egg, the third layer I put 2 slices of ham on top of the egg, and the 4th and final layer I kept normal again, it turned out really good!

      On the third layer third layer and second letter I suggest you add onions on one layer tomatoes on the other diced. and on the last letter you can either leave it playing the first layer or else add more cheese.

      @@benperez7888 I didn’t want to do that because I make my layers quite thin, so I wanted to have my first and last layers just the egg mixture to make sure it won’t rip and still looks aesthetic

    I absolutely love this recipe, I've made the Japanese omelette according to it (only reducing the amount of sugar a bit) several times already, and I wouldn't use another recipe but this one. It's DELICIOUS!

    We made this for breakfast this morning for the first time, 6 layers of egg, we had it with steamed rice. We did put tiny pieces of ham and spring onion in the egg mix and it was delicious. We have had one of these pans for a few years, our son used to live in Shinjuku Tokyo and brought one back one year to the UK for us.

    I have made this several times now and it is always delicious. For people in North America, the sugar she is describing is sold as Yellow Sugar in the store, also, if you do not have sake, you can substitute white vermouth with good results (always keep white vermouth in the fridge to keep it fresh).

    To prevent burning, I experimented with cooking in a low heat. Medium low. Try this instead. You may have the heat on too high.

      I always cook my eggs… low and slow. This way they always come out soft and fluffy as opposed to higher heat which makes them tough and rubbery.

    Just made this today for the very first time and it turned out so perfect. I hope it wasn't just beginner's luck. Really easy. The trick is a good medium heat, a bit of patience, good use of chopsticks (or a spatula if you can't) and good rolling.
    It comes out very spongey and soft.
    The Japanese have the best food and cooking!

Even though theres imperfections but shes not showing us the perfect making omelette but rather shes teaching us the "procedure".....     Ma’am, Thank you for this tutorial. I made this for my bento box with the ingredients mentioned but with 3 eggs instead; it turned out great! It tasted like the tamagoyaki slices that you get with a commercial bento lunch! I purchased the rectangle pan from Daiso $3.00! Thanks again!

    Bought a tamagoyaki pan because our regular nonstick was not easy to use. I substitute chicken broth that's been soaked with bonito flakes instead of dashi-worked nicely flavor wise.

    If you're planning on doing this recipe, the steps themselves are gold.
    Just make sure to do it in considerably lower heat and with a newer, less uneven non-stick round pan so you don't get burnt eggs.

    Thanks for this video. I never knew how this was made and tried it. I love the flavor and texture! Eggs are so versatile. And the fact this is even better cold, takes eggs to a new level. I can snack on this all day. One thing I do different is use way less sugar. Still tastes fine. I suppose for authenticity it needs the sugar, but for healthier version I remove most or all the sugar.

    I like to add a dash of milk instead of water for added fluff and honey instead of sugar in my recipe :3 sugar makes me sneeze and just gives me a terrible aftertaste, while honey still gives me that "sweet" and a little savory flavor minus the sneezing and later throat irritation.

    I make this european style. No dashi, no mirin or fish oil or sugar. You can use about anything. I use salt and pepper and herbs. I also like to roll different ingrediens into it. Veggies, cheese.. Whatever I have. It is so versatile.

    I love that this is in real time so you can easily cook along! :)
    Amazing tutorial, mine ended up looking like an abomination tho, the taste was good but I felt like I needed more egg to do 4 layers evenly (maybe I grabbed two small ones?).
    The layers were messy but my technique wasn't great either and getting the egg under the layered one was a challenge.
    Gonna try again, practice makes perfect ^^
