    I've read that the increase in food borne illness associated with produce is mostly associated with processed foods, e.g. pre-chopped, prepared kits, etc. Buying whole fruits and vegetables and washing them with water is extremely safe in the vast majority of cases.

    As an anosmatic person I cannot smell bad food but grow safe food myself.
    You are such a source of wisdom. Even me as a professional didn't realize that the water used for spraying pesticides is not generally safe. Hi and thanks from Germany.

    Personally, I went by the 3 seconds and it is safe to eat!!! Romaine lettuce has been a source of poisoning several times in recent years. My theory, field workers are going potty among the open leafy lettuce.🙃

      They have to use portable toilets and aren’t given running water to clean themselves!

    We eat antibiotics and preservatives for breakfast dinner and tea from supermarkets since the 80s

    One more ? If I vacuum seal cooked food. Can warming it in a sous vide will this help if so what temp should I use?

      Heating and defrosting vacuum sealed food should be done the same way - quickly.

    Whats the deal with bean sprouts? It seems they have been banned in ontario, I think but would they not be safe if washed properly just like any other produce, or is there some significance with the protein in beans?

      Sprouts are easily contaminated with microbes.

      Lacto fermentation tends to kill off other harmful pathogens and creates an environment where pathogens cant live. If lactobacilis is not responsible its probably a fermentation with similar results. Cooking the ferment may help here also. I might be wary of any homemade or street ferments. The brine helps to control bacteria also. I do enjoy fish sauce myself.

      Wash your hands. Wash veg under running water. Dry with a clean towel. Hope for the best.

    I was told to rinse rinse really well then soak in water with some hydrogen peroxide in the water for 30-45 minutes. Does this do any good?

      Probably not. Peroxide reacts with organic matter, so it will react with the food itself especially if it has any bruises or cuts.

    The part of the mold you can see is just the spores. By the time that is there, the food is completely compromised and shouldn't be eaten. The mold has gone through its cycle and 'ripened'
    I grew up and live with Filipinos. They will pretty routinely leave dinner on the counter overnight and then consume it for breakfast. Though, that is about the limit.
    I got seriously sick one time eating day-old pizza left in the oven in the middle of a blizzard. Not sure if I got like bird flu or food poisoning but I've been insanely cautious ever since. When your migraine is so intense you can feel individual veins all over pulsing... You really rethink things.
    In general I just practice basic food safety and hygiene. It's really not hard. Bacteria exponentially replicate until they reach capacity. Don't play around.

      "The part of the mold you can see is just the spores" - not really. The spores are very tiny and held inside capsules which reside at the tip of stems. You mostly see the stems.

      Fried rice syndrome is a heavily under reported food borne illness common in SEA, precisely because of the culture of leaving food on the counter over night, particularly the practices of leaving rice to partially dehydrate on the counter for use in fried rice. Symptoms typically include nausea or loose bowel motions, which is caused by the presence of 'cereulide toxin' that is heat stable and not destroyed when fried rice is cooked. Since nausea and loose bowels are common occurrences in the general population and don't necessarily correlate to a period of ill health, people often ride out the storm and never report it.

      I've been eating re-heated rice, (Amongst many other things you "shouldn't"), for over 40 years. No problems, eating them, week after week.Pre washed/packed veg though...
