Pineapple Orange Pig Out Cake

    This cake is a favorite. Especially for EASTER !!! Sprinkle Shredded coconut on top and just a couple of Jelly Beans.
    From birthdays to barbeques it is always a winner!
    Ingredients for cake:
    Preheat oven to 325 F. I like to make the cake layers ahead and freeze them. I find cakes are easier to ice this way, Bbut is is not necessary.
    1 yellow cake mix plus the ingredients that, that cake mix calls for like eggs, water, oil etc.
    1 cup mandarin oranges chopped
    Directions for cake
    1. Combine the cake just as the box directs.
    2. Then add the chopped mandarin oranges and mix just till combined.
    3. Grease and line 3 - 8 inch cake pans with parchment paper then spray the parchment paper with oil then dust the bottom and sides with flour..
    4. Pour the cake batter into the pans.tap the cakes on the counter and draw a butter knife through the batter twice to let some of the air out of the batter.
    How to make the Icing:
    16 ounces Cool Whip
    1 - 20 oz can of crushed pineapple packed in its own juice drained very well.
    1 - 3.4 oz package of instant vanilla powder
    1. Combine all the ingredients and then ice the cake
    2. Place one of the cake layers on a plate and put about 1 1/2 cups icing on the cake and spread it using an off set spatula.
    3. Continue icing the cake by doing the same to the next 2 cake layers and then ice around the sides of the cake.
    4. Refrigerate the cake

    Fussing I don't do. I have cake pans that I would butter and flour. Never use water or oil in a cake mix! Replace these cheap ingredients with melted butter and whole milk. The cake will taste homemade and delicious.

      I prefer to use oil. The one time I used butter, the cake tasted dry and hard (it was in the fridge, and the butter in the cake hardened - as it would do). The oil keeps it moist and fluffy.

    We just mix instant vanilla pudding and the pineapple (do not drain), add two small containers of whipped topping and add chunks of a store bought angel food cake and fold together and eat! No hot oven, simple.

    I have a recipe for a cake very similar to this, it's called mandarin orange cake, but in mine you don't drain the pineapple, as the juice from the pineapple is what dissolves and thickens up the pudding. Once that is done you fold in the cool whip and ice the cake. I've had this recipe for 40 years and I can't count the number of times I've made it for myself and for special occasions. It's always been a big hit wherever I take it. Also, you don't drain the oranges either as that replaces the water.

    I've been making this recipe for years. The recipe is called " Mandarin Orange Delight Cake." My favorite summer cake. So refreshing and creamy fruity. I never beat eggs, chop oranges, or make unnecessary work out if it. Just dump everything in the bowl and turn on the mixer. You will still have flecks of oranges throughout the cake. If you decide to make this cake, be sure you have room in your refrigerator to keep it chilled. I enjoyed watching. Thanks!

    I make this all the time, and the recipe I was given you don't drain the pineapple or oranges and it comes out amazing and moist. I was shocked when you said drain.

      W.qRo I don't chop or drain them, nor do I use the ingredients listed for the cake. You only use the eggs and mandarins for moisture, and something else. I just can't remember what else. Not much, I know. I only use the pineapple for moisture for the icing, undrained. When I add the pudding and Cool Whip, it becomes plenty thick.

      Drain the Mandarin orange juice into a measuring cup, then add enough water to bring it up to the amount of liquid the box recipe calls for. Add melted butter instead of oil. Add pineapple juice and all to the Cool Whip. But, you know what?,, no matter what you do, this is the best cake in the world. Like Jello, There's always room for more. We call it the Aloha Cake. Hello! and Goodbye.
      I'm working on a chocolate cake and icing version of this with cherries.

      This is a old recipe. I had this cake for the first time at least 25 years ago. And no, you don’t drain or chop the canned oranges. The mixer does a excellent job of chopping them. The recipe I was given also doesn’t have you baking three separate cakes. You make two round, or one 9x13, and slice in half to create 4 layers. The cool whip, pudding, and canned pineapple...this is one awesome cake, AND I’ve never meet anyone who thinks different. Yummy

      Make it in a 9 X 13 pan...use a large can of oranges and use the juice instead of water. You don't have to drain the crushed pineapple for the frosting either

    I started making this cake 20+ years ago, but haven't made one in a while. My husband loves it. Maybe I will make it for him for Father's Day. I reserve the juices that I drain from the oranges and pineapple and use those in place of the water called for in the cake mix. I also add shredded coconut to the cool whip frosting as it makes it a little thicker and it helps it to stick on the cake better. I also sprinkle shredded coconut all over the cake after I have it frosted. You can add a little food coloring to the coconut that you sprinkle on the cake for different occasions. An example would be color the coconut you are using on top of the frosting with a few drops of green food coloring and then place some marshmallow Easter peeps on it for an Easter cake. Green coconut with a small mound of brown colored shredded coconut clustered in the middle and a few of the small malted eggs candies laid in the brown coconut for spring to have a bird's nest. Jelly beans or gumdrops scattered on it for Christmas. Ideas are endless. I wouldn't put many candies on it though because it would alter the taste of the cake, just a few pieces to represent what you are wanting the cake to resemble or the holiday you are making it for. Also, make sure you keep it refrigerated right after making it as the cool whip warms it tends to slide down the cake. Usually though after the first serving you won't have much left of it if your family loves it as much as mine does.

    Instead of the cake. Take your large container of coolwhip, 1 large can crushed pineapple, 1 large can fruit cocktail and a small box of instant pudding.( I use pistachio for the coloring). Mix everything in a bowl together and refrigerate overnight. Delish.

      That sounds pretty good. But you could also take your lg container of cool whip & your lg drained can of crushed pineapple & mix well with a lg container of cottage cheese & a lg box of jello (i use lime for the taste) Refreshing!

    I make this cake quite often. It's called by several names. I call it Mandarin Orange Or Orange Pineapple. My recipe calls for yellow but I like to use the Orange cake mix, eggs, and the whole can of Mandarin oranges. Juice & all. No water. The frosting is large box dry pudding, the can of crushed pineapple, juice and all, mix well, then fold in Cool whip. Have you tried it with the Orange cake mix?

    Your frosting would not be grainy if you mix the pudding and pineapple together first. What juice there is left in the pineapple will dissolve the pudding. Then add your cool whip.
