- Ravioli Carbonara, are not traditional but believe it or not, they might just be the most beautiful dish I’ve ever created - and it was the result of an experiment! Growing up, my Nonna Igea often made ravioli using her traditional egg pasta dough.
In this recipe, my ravioli may not look identical but I have perfected this twist on the classic pasta pockets inspired by the recipe I’m possibly most famous for: Carbonara.

Top dish. miam ! But 🚨🤦🏻♂️ stop using plastic cutting plates. H look at their knife marks and others, as a result we have debris from these plates in the food that we swallow, and the cancer that lurks.

I tried a version when you reacted to the ravioli carbonara video, I did the same as you except I piped the carbonara mix around an egg yolk (like a ravioli Uovo). Tastes amazingly rich so I added chopped chives and it's great! Your passion is an inspiration, thanks.

I remember talking to about this maybe 1 or 2 years ago on a video chat when you did a fan meet and greet, I've worked my out but I use pancetta or I get small pork belly uncut and I season it myself and let it dry cure for a day in the fridge, I use pecarino and rainbow pepper corns you get a lot of different pepper flavors this way

This is a nice idea! Much easier than Uovo Raviolo. Definitely going to try it. Btw, I've personally found that using semolina flour is best to keep the ravioli from sticking to the counter.

What a great invention Chef, this is something you could market, Carbonara ravioli? Are you kidding me, that’s just awesome. A few years ago, I started making ravioli like your Nonna, it’s so much easier, once you get the hang of it, there’s almost no waste, so much better than making squares. @@KezzaTianzun Ok sure I can recognize that, maybe Vincenzo didn’t know this, I don’t think he is the kind of man that would do something like that intentionally. He has a lot of passion for the Italian ways, and the proper foods, if this was already a registered recipe, I’m sure he didn’t know.
I've recently been filling ravioli with bolognese ragu and bechamel (one side ragu, one side bechamel, not mixed), but this is on another level. Curious to find out if these freeze as well as my creation.
Can I use pork belly as substitute ???... then just add fresh ground pepper and sea salt ? Thoughts ?

I never thought of preparing ravioli like string beans before, now I kind of want to do it and cook them as 3-4 connected ravioli for presentation, still pinched and crescent shaped but with maybe a centimetre and a half or so thick connecting depending on overall size, probably have to use a chef's basket
