It was amazing to watch them break the ostrich down- I used to butcher whole chickens, cut them up into portions, on a regular basis, and watching someone do the same to such a big bird with such skill is a treat. It's been a very long time since I ate ostrich, too, but it is a very tasty as well as healthy meat, so the diners are in for something special.

The knife can be inserted smoothly into the fascia and muscles, and there is no need to chop off meat other than the lumbar vertebrae. The technique of dismemberment is also important to make the food tasty. I am glad to watch this video because it is not often seen.
thats the best vid from the Bangkok siries ever! first Ostrich anatomy & carving lesson for me that's for sure!, ! honestly i've never tried Ostrich meat but judging by the fibers and muscles condition as well as the color of the flesh i can say that ostrich is simply a glorefied Turkey , the taste must be very similar between the two species! has any one tried Ostrich meat before? i'd love to hear your opinions!

For anyone that has not tried ostrich egg and you like chicken egg i recomend it....it makes the most fluffy rich scramble and the most amazing omelets ect , its slightly more rich in flaviour but thats the only real diffrence

There is an emu burger vendor at our state fair every year. I've eaten one and honestly, it doesn't have much flavor at all. Was like eating a bland beef burger. I'm wondering if ostrich is similar.
This gentleman shows the utmost respect while he butchers this animal that gave its life so that these people could partake. I really do feel like he had not only professionalism but a gentle, respectful presence about him. Like if you could sense that.
