415 - Chicken Loaf in Fowlers Jars!, my fave way to cook Chicken Legs + more - Off Grid Australia

A full day and a bit in the kitchen!
Using the leftover pork mince, making egg and ham cups, trialling the chicken loaf in jars as well as the steamer! My fave way of making chicken legs plus more!
Choc drinking powder
2 parts sweetener (You can of course reduce this, especially if making this on milk instead of water!)
1 part cocoa
1.5 parts milk powder (we use Coconut milk powder)
Salt
potato starch
Sample Size - fits in a Thermomix, is the max!
400g Sugar, ground to icing sugar
200g cocoa/cacao
300g milk powder
10-20g salt
80g potato starch
We use 2 x dessert spoons per serve, on just straight boiling water, so if serving on milk etc, you will have to adapt :D

The Inkbird Thermometer I use, they do have cheaper models but this one is USB-C chargeable rather than batteries and tolerates getting splashed etc, I've tried a few models and this is my fave.

Are you in the RACQ? Im amazed at the quantities you cook! You must have strong arm muscles stirring that pasta! I think of you on wet rainy days! How you cope with trying to dry clothes, the endless folding up and all the dirty dishes! You do an amazing job! You deserve a easy day sometimes!
My insurance has an RACQ equivalent roadside assist service, so I don't pay for RACQ on top of that, but I have access to it if needed!
We actually have temporary lines up in the house today with the fire going lol...
Dishes are always a bane, no matter how much we do them I always seem to have to wash something when I go to cook heh.
Yay! garden prep time! I feel like garden season is year round here in the US with yours starting up as our season ends. I sure hope you have a great season. Ours was 50/50 this year because of bugs. We don’t put anything on our plants so we grow extra but they were greedy this year lol! Great video! Food looked very yummy! TFS!!❤
Fx for a modicum of success this year! I have Darryl working on making me some frames for coverage for the beds, we bought a small welder to try! A new skill!
A lazy day for me? Wake up, play game while in bed, eat something, sit on the couch and doom scroll Instagram, lay down in bed and listen to music, eat something, sit in the chair on the porch and watch the world pass by.. I mean your lazy day is a full on busy day in comparison.

My idea of a lazy Sunday is just puttering around. Today I'm reading, listening to videos, online research, baking bread to turn into crumbs, doing laundry and dishes. I also feel guilty when I do less and then I feel angry for feeling guilty! My son took fashion class in high school a couple of years ago and sewed himself a stuffie - he was a blue and white Yeti and super cute! We are still in the throes of summer in Alberta but the latest heat wave has passed at least. Fresh fruit is abundant so trying to preserve some when possible. And I baked 16 bagels earlier this week to freeze but they are already all gone. LOL
I forever bake large batches of things with the intent to freeze and have none left to freeze when I go to do it lol, I would need to freeze straight away I think! :D

Love those ham egg muffin cups, I do something similar with bacon instead and prep for work lunches , I cut up some tomato and pop on top which is nice x
Next time I cure my own bacon I think I'll try cutting it nice and thin and using it for them!

Beautiful day today, 4 degrees warmer, so I am happy. I make quiches with puff pastry, diced bacon and heaps parsley. Freeze them. Never had a complaint.

Morning nyssa we love what you do and showing us life off grid with kids ,we live in caboolture so not as cold but totally understand what your saying re seedlings ...I know what you mean with lazy days your probably like me and if you don't see progress or change of anything you feel lazy the joys of being a mum with chronic illness .I love watching the meals you make it gives me ideas and some I tweak as I have fussy kids
I definitely feel the guilt if I'm sitting around being idle when I know so much needs to be done, or there's so much i WANT to get done, which is almost the same thing!

Mostly only for the pizza oven atm! I'm not sure how we're going to rearrange when we get the roof up as to whether it will still need a primary spot, ideally I'd love something I could put two pizza ovens on, but buying a larger bbq for just that purpose, seems wasteful, but having it there as backup is a big thing, like if something ever happened to the oven! I'm still contemplating lol.

Just curious do you ever eat fish
Not often, mostly because of transport, I actually have some fish in the freezer, some whiting from the last shop that we will eat this month, but generally speaking I don't buy much of it, I did talk about getting some last month and got some suggestions actually and I was going to see if I could buy a box frozen from the deli, and then I would be less concerned about it defrosting in the trip home, just knowing how seafood can be such an issue if not kept nice and cold!
We adore seafood though, and at Christmas I always make a point of getting some as a special thing!
That owie on your hand looks nasty, I hope you are ok! Definitely consider getting it checked if it doesnt bugger off, one of my kids had something similar looking and it wasnt good ❤️
It's a burn unfortunately :S. The doors to the oven are hot, the handles stay cold, but the rest of the doors are REALLY hot... took some getting used to :S

It is the Luvele Eclipse (affiliate link in the description if you decide to check it out :)) It is rated at 1200w, so I fully expected to have to run it off something other than the main solar, but I put a meter on it when I first got it to check how much power it was drawing and it ran really low, I was pleasantly surprised, 350-500w was the average draw while using it to mince in a standard kind of a way!

It's running atm, we're still in the process of deciding what action needs to be taken to keep it going, we're hopefully taking it to a friend to help diagnose the most immediate things that need fixing and assess how to keep it running optimally for the best price lol.
