How Japanese Wagyu Beef is Graded | Farm to Table ★ ONLY in JAPAN

- "A5" Graded Wagyu Beef is considered the best in Japan ー but what does that score really mean? We'll go inside to talk to the Wagyu Beef inspectors on the job at the Yonezawa Meat Processing Center to learn how they do it using the BMS (Beef Marbling Standard) and Beef Yield. After inspection and grading, we'll see them cut and distribute the beef to restaurants and supermarkets and try some of the A5 Wagyu special dishes famous in Yonezawa like its Gyu Nabe -- also known as Sukiyaki.
Japanese Wagyu Beef is quite different from other beef around the world and within Japan, there are so many regional brands. It's hard to know what the difference is between Kobe Beef and say, Yonezawa Beef other than the branding, but there are factors that can change the taste like climate, elevation, feed, housing conditions, treatment of livestock, and water.

You can see why this premium grade wagyu is so expensive, judging by it being such a labour intensive industry. It was encouraging to see the producers reducing their environmental footprint, therefore actively helping to minimize climate change. All beef farmers around the world could certainly learn from the practices of the Japanese wagyu industry.

That piece of more than 700dollar you can buy a full cow in my country with great quality!!! Quality here is less fat in the meat than mixed fat on the way pf Japan!!! There are here some full grassfeed cow meat.... try the fullgrass grew meat!! It's my best experience. Even with the wagyu A5 that is amazing .... but loose in beef taste against fullgrass!!

That pricing at the butcher's shop was incredible. To get such a high quality product for that cheap, what a treat.
Also my buddy works at a wastewater treatment facility here in the states and his facility does a biofuel recycling setup like the one you showed at the ranch. It's tricky because methane corrodes the equipment that's used to make power from the gas itself but it is worth it for sure

For my birthday I treated myself to some imported A5 wagyu and was blown away!! It's like meat candy. I wish I could afford to eat it all the time, but alas.... I shall have to wait until my next birthday.

Japan is amazing, I went to Tokyo and was in the bottom level of the subway system and still saw the exchange between two train drivers with almost no one around: they still carried out all the formalities of handing off control of the train to the other driver as if they were on the top level and driving the famous Shinkansen! Both wearing spotless white gloves and very clean uniforms, amazing. I went to the cheapest restaurant I could find in Tokyo on what I thought was an obscure level of some indoor mall and ordered steak and expected a typical American 'Denny's' style meal.... nope.. the steak was cooked to perfection and the plate was immaculate and had just the right sauce and veggies all neatly presented, what a treat!
It's wonderful to actually see how Japan prepares their best beef cuts for their consumers. You'll always feel safe if you know that the meat you're eating is cleaned, cut and prepared properly inside a very clean environment. My family loves steak.... New York, Rib Eye, T-Bone and Sirloin being on top of the list. :) Thanks John for the video. We'd sure love to try the Wagyu Beef in Japan hopefully in the near future. :)

I'm Italian and I'm very fascinated by what every culture considers "premium":
we also like some fat, especially in cured meat, but all that fat, even if perfectly marbled, would be considered a "defect" in our "classic" point of view for meat. We like it very lean usually, and it costs more that way here.
Still I can perfectly understand the reasoning behind wagyu being premium and I really love it :)
Thank you for your point of view. It is true that in many countries we avoid that marbling (like with Jamón in Spain)... but I assure you. In the case of Wagyu beef, it truly enhances the flavors.

Try the Argentinian grassfeed aberdeen angus breed... for me is the best meat in flavour!!! It beat the A5!!! And is another league in barbecue of wood and time smoked while it cooked (asador style 7 fires Francis Malmann) try that is very worth it!!
It cost more every where man. It cost more because it is better quality. But it doesn't mean just because the price is higher in America compared to Italy, considering your comment, doesn't mean America is better. You have to taste and see

I've never tasted wagyu (I don't live in Japan plus it's probably too expensive anyways) but I've heard a lot about it. Its amazing how hard they all work to make sure the wagyu is perfect (they could even cut it similarly by hand!) so it's not surprising it costs a lot.

I have never been to Yamagata but have that on my list of places to visit on my return trip to Japan. I have tried A5 Wagyu here in Honolulu and my-oh-my! What a wonderful experience that was. But through your video, I would like to try Yonezawa beef one day very soon! I thought it was pretty interesting to see how they stamped the A5 beef. I totally love your videos my friend!

Until you make an episode like this with music, narration, research into biogas - edited the audio clips to make sure the levels are balanced, fix the color from several cameras - there is NO leisure to this. It’s a job. Maybe other CZcamsrs vlog. This is not a vlog. This is a program 😉 long nights and days of work. Unless this episode gets maybe 500,000 views, I won’t make enough to justify the costs in time and money spent so I’m extremely grateful to the people backing my work on Patreon!

Please do Wagyu videos from different prefectures as a series, im sure people will appreciate the content and maybe personal comparisons between for example Kobe vs Matsusaka wagyu. That would be so amazing to see the minute differences between cattle breeding, taste, diet and quality of grades between the different regions of Japan.

As someone who went to culinary school it has been my DREAM to try wagyu, even prepping it looks like a blast.
I didn’t get into the kitchen with this episode, more processing plants but I’ll try something new in the next one. It is really amazing to see the process upload close and learn about this industry more it’s amazing how transparent wagyu communities are compared to livestock in other countries. They’re proud of the work and they deserve a lot of credit.
