I have a mixer just like that. I always leave it running when I pour. Seems to make the concrete come out easier. Just have to allow for windage when you pour. 👍

I’ve never mixed cement for post holes. I usually put the post. Fill it with a bag of dry cement. Then add water
Lots of people do it that way, I've just had better luck with a faster set this way.

Agreed, I shut it off a couple times just because it kept pulling the bag out of my hand 😂
