I would watch BOTH Aries and Taurus. The Taurus chart will look more like your transit but the Aries pieces are still relevant.

By talking about "Jupiter in Gemini the 2nd house," you are talking about taurus ascendants which doesn't apply to other ascendants. As someone who is aquarius ascendant, jupiter is in my 5th house which has nothing to do with 2nd house narration sweetie
If you watch for your rising sign, it will match your chart. If you watch for your sun sign, it will not. That is why I recommend watching for both. I know this is a very hard concept to have click. Over 20 years ago when I was first learning astrology, it took me a while of my teacher explaining it to me before I really understood it. Your natal chart places YOUR ascendant (the sign rising in the east when you were born). The rising sign is a viewpoint that we look at the sky from. When we run SOLAR charts, as we do for horoscopes (different than a natal chart), we put the sun in the ascendant position because we are looking at the sky through the lens of the sun. Both are accurate and each are true layers of your astrological picture but unless you have the same rising sign as you do sun sign, each chart (solar and natal) places the planets in different houses. When we look at a horoscope from the sun sign perspective, the sun is on the ascendant, but that won't match your natal unless your sun and rising are the same. That is why I always suggest watching both your sun sign AND rising sign reports. Only the rising sign report will match up with your natal placements but each are windows that show the astrological picture from your perspective. Imagine a house with two windows on different sides of the house showing a different scene - one a lake and one a highway. Each of those views are pieces of what it is like to be living in that house and one view doesn't make the other untrue, they are LAYERS of truth of what it is like to live in that house, with views out the window that are showing two different scenes. I hope that helps!
