    6 cups chicken broth
    400ml can coconut milk
    2 lemongrass, ends smashed
    1 package tofu pockets, halved
    500g vermicelli rice noodles, cooked according to package
    250g bean sprout, blanched
    1/2 cucumber, julienne
    1 whole cooked chicken, deboned, sliced
    4 eggs, medium boiled

    I love all things curry from SE Asia. I am happy finding prepared spice mixes and pastes. Helps make it easier to explore new dishes to make. When I was in SG last time I crossed the border to Malaysia the food I tried was fantastic. Very difficult to find similar food here in the US.

      I actually found them at Costco. Set of 4 for $14.99. Otherwise I saw them at local cook shops/kitchen ware and West Elm for $16.99 each!!!

    Would ranch 99s carry those pre-fried tofu packs? Or do you think I need to go to more of an Asian market. (I'm in the further east bay area, but they have a ranch 99 in concord)

      Yes they do - several brands. I just got some yesterday to make this recipe; however I could only find a different brand Laksa paste, but same measurement - 7 oz. Will see how it goes today :-). I plan on using 8 cups of broth since I am easing my way into spicy foods.

    Hi Flo. You probably don’t remember my asking you about the kind of chef knife you like. I know you make fun of your knife skills, but I love to watch you use a knife. Well guess what I received totally unexpectedly from my sweet son for Mother’s Day? Yep..a Wustoff chef knife with a penny inside the box. Do you know the reason for the penny? I do now, but didn’t until Frank told me. I hope you had a beautiful Mother’s Day. You certainly are a great mama and wife, not to mention a great cook. Blessings to you and your family.

    would it work to use a rotisserie chicken or does it have to be chicken from a chinese store?

      That should be fine. I was concerned for conflict of flavours but rotisserie chicken might work well if it’s not bathing in barbecue sauce.

      Definitely T&T, that’s where I buy them. Some smaller Asian markets like Chong Lee. Have never seen them at large supermarkets.

      I thought it looked kind of like tofu but it looked more spongie than the kind I have used. We have some variety at our stores but not too much. I envy you the variety available in Vancouver or any big, diverse city.
