- I was trying to decorate this beautiful loaf, and it was the last piece. I didn't like to add more scouring to it. Just to make it simple. And really I am surprised from the result and oven spring

my loaf usually doesn't allow me to design , I mean its not dry enough to make scoring easy , but I have perfect oven spring , what is the problem , thanks
Hi. Itâs not about dry. It should be cold. I am keeping the dough for 16 to 24 hours in my fridge 2-3 c. Then I score it immediately after taking it out of fridge.

Did you bake for a few minutes after you made the wheat design and then do the long score ?
Yes. Usually I bake the bread for 5 to 7 minutes before making the final deep score
