Freeze dry some shredded potatoes for shelf staple easy hashbrowns. For every cup of dry potatoes add 1 one cup of very hot water and let sit for 15-20 minutes. They are great in a pinch. Also, cube up some "country potatoes," par boil the potatoes, add some diced onions and peppers, and you have potatoes O'Brian for your freezer.

I LOVE potatoes! You'll NEVER starve if you've got taters. Baked, mashed, fried, scalloped, make your own french fries, baked potato soup... I would dice up the steak and use a few cans of the veggies and a couple potatoes and onions, and make a BIG pot of soup (which will help you feel better, too!) and feed your family for a couple days. Feel better soon :)

I dehydrated most of the last batch of potatoes I got. Re hydrate for scalloped,, hash browns, au gratin etc. Some I dry canned like the Zimmermans and some I regular canned like Whippoorwill Holler. I have more I grew last summer stored in the garage covered in cardboard. Also, I don't get much bread from the food bank. I think it because there are only 2 of us, but that is ok with me.
we keep our bread in the fridge or freezer so it keeps longer. Get to feeling better!

I peel and slice the potatoes, parboil them for 3 minutes, drain and let them cool. Then I package them into baggies and freeze them in serving size portions. When I want to make fried potatoes, I just thaw a package on the counter or in the microwave, pat them dry with a paper towel and they are ready to fry, or to boil - however you want to cook them.

I recently made garlic butter mashed potatoes from about 13 pounds of potatoes. Once cooled they went into the freeze dryer. Makes nice instant mashed potatoes.
I've also very thinly sliced the potatoes on the mandolin. Next I blanched them and dehydrated them. Use for au gratin or scalloped potatoes.

I was very disappointed at the foodbank where I go. I got two small boxes of bruised fruit and veggies. One box was on a pallet further down the “line” and had those caution cones around the front of the pallet, I was told to go get a box from there but don’t go inside the cones…..🤔 uh, that was the only way to get the second box of what was ……. I was waiting for a friend of mine that was helping this church divide up the food from the food truck, she’s there until everyone has their boxes. There was 4 pallets still wrapped in plastic sitting in the driveway. The lady directing everyone said if we didn’t get much food come back Thursday we could get more. I thought ok, those pallets were for Thursday…..right? Not from what I saw. I watched all the “helpers” unload the pallets, put everything on Dollie’s and shopping carts, and load it into their cars!!!! 😡😡😡 4 huge pallets loaded with some premium stuff! Ziplock bags, cases of soda, cases of water, toilet paper, paper towels……made me sick! Mind you in the boxes they gave us, there was no bread, no meat….hot (from sitting in the sun) sandwiches in plastic wrap…..thawed out frozen fruit…..and they took all the stuff on the wrapped pallets…….i don’t mind helpers getting a few groceries for their help, they deserve it, but what I saw was greed, and I’m sick to my stomach. I’ll never go back there again.

Oh man. This is probably the worst story I have heard about a food bank experience. I'm so sorry that happened. Yes the volunteers should be able to grab whatever WASN'T HANDED OUT, but to take from those first is never ok. I hope you looked for a different one! There are some great ones out there that help out so much!

So you could cut the eyes off and plant them for a spring potato harvest. And as for the rest of the potatoes I love to dice them and make funeral potatoes to stick in the freezer or can them like adaline Zook does and make fried potatoes, French fries, or mashed potatoes out of them. But frozen diced potatoes are also great for breakfast bowls and potato soup too

I think the food bank is the best thing for the working poor. I used to get food stamps and never went to the food bank because I didn’t need it. Now that I don’t get food stamps the food bank is a huge help. I went yesterday and got a lot of great things but it was an hour and a half wait to get in. I wish mine gave out that much bread! I like using fresh mozzarella like that to make caprese on baguette slices with tomato, basil, and balsamic vinegar reduction. It’s my husbands favorite treat.

Hashbrown casserole, loaded baked potatoes, loaded fries, loaded baked potatoes and a breakfast skillet comes to mind with the potatoes. I have seen those tuna packets and was thinking of adding it to a can of salmon to make patties with it.
