Can't Copy Text from a PDF File (Solved)

This PDF _isn't_ locked though. Instead, I try to select some text, and the *whole page gets immediately selected*. The file even says it provides 'text extraction for accessibility' - God knows how... 🙄

Microsoft tools like OneNote now allows you to copy text from picture.
Which means if you take a snapshot/picture of the page area, from which you want to copy text from.. you can easily convert the pic to text.

I have just run into one of the most nonsensical issues I can imagine relating to computers overall. Somehow and for no logical reason whatsoever, when I copy a page to clipboard which displays perfectly clearly in Adobe Reader at 210%, and I then paste that image into an image editing program, and then I increase the size of the image to 150% (which, again, is a full 60% less than the increase in image size at which the text displays totally clearly) the image is totally pixelated!!
