I think it is the absolute sweetest thing when she explains what a pretty common thing is, like the flea market. It’s just very unpretentious and sincere and very comforting somehow.
It's also very helpful for people outside of the US or who's first language is not english. A lot of stores and such are only common in the US and with her explaining what it's all about, we can understand what she means. 😊 We do have flea markets though 😄

Emma, when you said that the chocolate is hard, it means that the chocolate is seized up. Chocolate is prone to seizing or tightening up. It happens when you overheat and burn it and when you let the chocolate come in contact with a little moisture or even if you stir it for too long - which is why we are always taught to keep chocolate dry. If your chocolate does seize, add boiling water to it, 1 teaspoon at a time, and stir vigorously after each addition until the chocolate is smooth. Or you can either add some sort of fat like vegetable oil, clarified butter ( not the butter that you use on bread, clarified butter is ghee) or Cocoa butter. Add a little bit and then stir vigorously until the chocolate is smooth.
