  • I've eaten this same breakfast everyday for nearly the last two years. It's part of the slow-carb diet popularized by Tim Ferriss. I lost 30 lbs in the first 6 months on the diet when I started a few years back.
    Egg white carton
    1 large egg
2 strips of thick cut organic bacon
    Canned lentils
    Organic spinach
    Italian Dressing
    Your coffee of choice
    Bacon - medium heat
    Cube half an avacado
After bacon, cook lentils on low heat.
Add 2 egg whites and 1 egg to lentils in pan.
Stir constantly until no uncooked egg white left.
Top with mexican hot sauce or salsa.
Small handful of spinach in bowl with 1 tsp of Italian dressing

I'm glad you mention the cheese. I wish there would be more videos that are about maintaining the weight on a slow carb diet, rather than lots of videos about how to loose weight. Not everyone who is prediabetic, or simply wants to avoid developing insulin resistance, is overweight.

This is an excellent recipe! I made a variation of this with cooked spinach instead of serving it on the side with dressing. The only drawback with cooking spinach before the lentils is that you need to cook everything together a little longer to extract the excess moisture from the spinach. Other than that, it's incredibly filling and sustainable. Guess I'll see how well this staple will work with some other slow carb meals. Cheers!

Great video, but I have one question: Why don't you just stir your spinach in with your eggs and let it wilt into the egg/lentil part? Do you just prefer it fresh and not want it cooked? it would then also be fewer dishes and more kind of one pan cooking. Just wondering...

    • @gibsonedu
      @gibsonedu  Před 6 lety +5

Hey Janine. I've tried it both ways but I don't really like the combined flavor of spinach with eggs and I like the crunchiness of it when it's raw :)

I am looking on CZcams to see if there is such a thing as a bean diet. I have gone so many years without eating any beans because of gas, but yesterday I was really craved them, so I soaked a 15 bean soup for 24 hours and cooked it for 2 hours and it came with cajun seasonings, so it was salty. It was so so so good that I ate 2 very large servings, and then today I had another 2 very large servings and I was so full. I do I.F., so I only eat 1 time a day and then fast for 23 hours. Normally I think about food all day long, but now I realize that I don't. This is cheap, easy and delicious, so if it would help me to loose weight, that would be exciting!
