- in this cake decorating tutorial I show you how to make a crackled fondant cake with rice paper puffs and Sails. I love the lightness of this pale fondant design against the gold background. This would also be gorgeous with deeper colors, and I may do that also sometime soon;) In this style, you have to fight your inner neat freak and just go with it;) It is also a great way to use up some of your left over, slightly dried out fondant that is otherwise still good but would normally be tossed. Use arm and hammer, lemon juice and peroxide make a past mixing the 3 and apply… wait 2 or 3 min and scrub…. Making ur pan looking like new…. Love ur Chanel, greetings from McAllen Texas

How beautiful. I loved the cake and tutorial. I’m not much of a fondant baker/decorator, but would love to make this cake. Do you think it may work just fine w/out the first layer of fondant…possible just using buttercream or white chocolate ganache.

Great vid! I noticed that your rice paper had a little flexibility to it as you put it in the frying pan. Did you steam them or dip in water a little before added them to the frying pan? Thank you!
No it was straight out of the bag:) I can't remember but maybe it was a humid day?

Just beautiful as usual. Thank you. I was wondering how you get your rice paper sails white? Mine always look almost creamy/beige next to my fondant. For lack of a better word, they look almost dirty if I do not colour them. Not sure what I am doing wrong.
You can add white food coloring to the water that you dip them in. They may end up more opaque, but still whiter;) I just buy my rice paper on Amazon.

I hadn't seen it with the fried rice paper, another great idea! Do you know if the fried method will keep its shape in the fridge or should it be decorated last minute?
Definitely last minute with these;) They are cool but very fragile.

I wod say about 30 mins on the lowest setting. I kind of check about every 10 mins. It is done when they are no longer flexible. Good luck!;)

How long do you keep the rice paper in over? And afterwords i assume it can be refrigerated, correct?
I would say about 15-20 minutes. I would just keep an eye on them because it isn't always the same time. Depends on humidity. I would keep them out of the fridge if you can, but rice paper is more resistant to humidity then wafer paper. The puffs definitely need to be kept out of the fridge.
Hi new subscriber here, just wondering is there a way to add colour to the wafer sails you puffed up in the pan? I’ve done the ones in water before myself but I’ve never seen the way you puffed it up in the pan before. I’m just a hobby baker for friends and family but love to wow them with new technics, this is defo on my list to try out now 😊
Guess you'll have to paint it, let it dry and then puff it
That's what I would try;) once it is fried it is very fragile. You can dust them gently with petal dust or luster dust You can even touch the edges with gold or silver luster dust and Everclear. Let me know how it works for you;)
So paint the disk then puff it up?
Yeah soak it in wa water withe color added. Let it sit for a minute. Take it out and let it dry flat on some parchment paper. Then you could try to fry it in an unflavored oil like in the video. I don't know if it will work since I haven't tried it, but it makes sense. Unless there would be something in the color itself that would prevent it from frying up right. I wish I had time to try! Otherwise, if you want to brush on some dry luster dust or metalic luster mixed with everclear or vodka and touch the edges with it , do that after it is fried and cooled.

Can I put the cracked fondant directly on ganache covered cake?
Sure! Just use water like, simple syrup or piping gel to attach them.
Can this be done on a buttercream covered cake?
Absolutely!
I’ve used a couple different kinds of edible gold powder and gold paint. They are always bitter! Is there a way to fix this? Or do people generally avoid eating the gold part?
Maybe use a lemon extract instead of alcohol to make it a paint? I usually tell them to not eat that part if there is a lot of it.
