I watched this two weeks ago and have made "Matteo Lane's mom's pasta" at my boyfriend's request about six times.
He's a comedian, chef, AND a gamer
And opera singer!
And an artist!
Speaks 4 languages, does impressions, and he has a rockin' body too.
And a singer, and has a porn star body. It's just not fair.
Would you be willing to please send me the exact name for the cheese sauce that you used I know garlic pepper salt and all of that but oh I can't even remember what you called it please just will you send the whole recipe to me I want to make that for my son he's my little Angelo My Sweet Angel as they say in Italian 🥰
this kinda seems like those budget meals your parents make when you're little bc y'all don't have a lot and it becomes one of your most favorite things in the world. I LOVE my mom's red beans and rice and if she makes me rice cereal the next day with the leftover rice, I'm in heaven. I had no idea those were "poor foods" until I was in my teens lmaoooo.
That’s a lot of butter and cheese, though, so I wouldn’t call it budget. I’d call it easy and fabulous!

I like to call these dishes “cost effective” dishes and for my upbringing, these dishes are the best.

Made this tonight for my husband and brother for dinner, we all LOVED it!!! Next time I will make a double batch.
I am also a Mexican mom to a 20 year old now. You brought me back to when I was not being paid by the University I was working for and I had to be creative, cooking "international dishes" for my son (5-year old back then) and I cooked pastas and tapas and pinxos... hahahahaa. He was so happy, lighting candles and sitting all cute at the table, waiting for my newst creation (chef on a budget). Thank you for that, Matteo.

This was easy and delicious. My husband, who NEVER voluntarily compliments my cooking, said, “this is really good.” And I think it lends itself to endless variations by adding veggies, or proteins or something as simple as pesto. It’s going on the regular rotation! BTW when Matteo says butter, eggs and cheese need to be room temperature, he’s not kidding! 😊
Stay away from veggies, sister!
"Why am I acting like it's not going to taste good?" is me everyday when I add 'too much' cheese to food.

I learned yesterday, while reading one of my father-in-laws recipes…he has been cooking his pasta noodles for his mac n cheese in the microwave. For 14 years. For 14 years I’ve been eating non-rued…raw assed flour…unsalted water…microwave noodles. It all made sense yesterday.
Also, this looks delish. Bellissimo.
As a teenager I would cook my pasta in the microwave. The first couple of times it was a bit of a mess, but once i figured out the perfect cook time, it worked like a charm. Perfectly al dente pasta every time.
It’s almost the same as in a cookpan
I was able to make this in less than 15 minutes. And my 12 year old has decided that it is the best thing I have ever made. I do not make pasta often. But this will become one of my go to weeknight meals. Thank you.

Made this for dinner! I used 3/4 of the spaghetti noodles in the package. I used 1 1/2 cups of freshly grated parm from Costco, and the milk was about a 1/4 cup. Maybe slightly less. Loved it!! So easy. Thanks for sharing Matteo!

The Romans with slaves and sleeping around etc, made sure that Italians themselves are a bit of a mix anyhow, that is why some Italians have darker skin.

Born and raised in Emilia Romagna, I love cooking. Trust me... this pasta dish is legit! I am sure it tastes delicious!
Don't even pay attention to the lame "proud Italian" comments. A lot of Parmigiano cheese and pepper make every dish taste great, but you also need to know how to get the lovely creamy texture by only using pasta heat or just a bit of pasta water, so... well done, Matteo!

Back in the day (early 90s when I was una bambina) when my family lived back east in PA my mom and I would watch The Waltons & Little House on the Prairie and then she’d make bread, like home made bread! 🍞🧈🍓And we’d have it with butter and strawberry jam, omg I loved it! As a millennial growing up in the 90s we didn’t have online anything. Doing activities was amazing. We’d also cook & bake a lot more and do crafts, like from the craft store☺️

It seems like your mom was making a version of pasta cacio e uova. It often call for lard but lots of recipes use butter. The only real difference is most recipes call for slightly more eggs and for whole garlic sautéed in oil then removed.

I just made this and my son and I both agree this is going to be a regular meal for us! It takes me back to my childhood, a very very very big upgrade but it’s similar to a certain Angel hair pasta boxed dish my brother and I loved as kids. Trash, I know. That’s about how I make Alfredo, excellent with heavy cream of course. And I add seasoning that most people might not include-dash of cayenne, sometimes Herbes de Provence.

When I was a kid we had Oil Macaroni...I wasn't a huge fan but my grandma and great aunt and most of the family were all about it. Not sure if it came from their part of Italy or if it was a personal concoction. Basically diced green bell pepper and garlic in olive oil and toss it in with some spaghetti. 🤷 I think ingredients and recipes are specific to location-and why they are debated so loudly and passionately by all Italians-we lived in Wyoming. Perhaps the freshest veggies on average were bell peppers so they used what they had? Idk. Thanks for another one, quip master general. 😉👌💗
