    Upon publishing our video tutorial on how to process yam flour (elubo), some of our fans specifically requested that we teach them how to process poundo yam flour and as usual, GFB gladly obliged.

    But let us clarify this upfront that yam flour (elubo) and poundo yam flour are both processed from yam, which belongs to the genus Dioscorea (family Dioscoreaceae). However, the method of processing each of them distinguishes one from the other.

    It might interest you to know that once you fail to judiciously follow the appropriate processing method for any of the yam powder, you won’t get the right final outcome you desire.

    It is also noteworthy that yam (Dioscorea) is totally different from potato (Ipomoea batatas) 🍠 as portrayed by some peeps.

    Firstly, you need such equipment like: weighing machine; slice and grating machine; milling pounded yam machine. Thus, yam flour processing includes: washing of the yam; grating of the yam; milling of it and packaging. Consequently, the production process of pounded yam flour is: purchasing of high quality white yam; washing away the sand on the yam tubers; peeling of the yam tubers; then washing of the yam tubers; cutting and grating of the yam tubers; grinding and sieving of the granule; finally, packaging of the yam flour in branded package.

      Those are great tips for peeps that want to go into large scale production of yam flour.
      But don’t forget that blanching/parboiling the yam is important to prevent them from changing colour during the production process.

      Quick one, after the 5 minutes parboil, will it become soft a bit? Or it should remain hard like how you put it in?

      @@rems_andrew Hi, the yam should remain hard as shown in the video. You are only parboiling the yam and not cooking it, hence you need to monitor the level of heat being used to parboil the yam. Best regards

      You parboil the yam to prevent discolouration and to aid faster cooking when eventually converted to flour. You are welcome

      Oh my goodness. Sorry to hear that. It could be that you didn’t start drying the yam immediately after parboiling. Or maybe the specie of the yam you used.

      You aren’t meant to soak it in water. You leave it in water once you peel it, while slicing it before transferring it to a pot to parboil for 5 mins

      Oh my goodness, sorry to hear that. Did you leave the yam in water all through the time you were slicing them? Did you dry the yam immediately after you finished blanching them?

      It sounds strange to hear that you followed the process accordingly and yet the yam turned black. Now I’m speculating that it could be that the specie of the yam you used isn’t a good one or that the settings of the dehydrator you used is too harsh on the yam.
      I’ve had many of my fans tried this method and came back to me with positive results. Some of them even shared the pictures of theirs with me.
      I suggest you try again with another yam. Maybe dry them immediately after blanching under intense sunlight to observe if there is an improvement. Remember to spread out the yam. Don’t place them on one another. Slice the yam thinly for easy drying. Don’t overcook when blanching.

      I actually blanched as instructed and dried as instructed. I got the flour as you did in the video but when I tried to make it into poundo the first yam was slightly bitter and the second was like starch

    Please can I use the poundo yam method and elubo method for elephant foot yam as that's what they readily have in the UAE

      To prevent oral toxicity/itchiness as a result of the elephant foot yam, I recommend you first soak them in tamarind water before completing the rest of the poundo yam method. I hope this helps.

    After trying the processes, during the course of sun-drying, all the yam chips started changing color

      Probably you didn’t parboil the yam the right way or it could be from the yam specie

      I parboiled the yam, sundry it but it turned to amala when I cook it 😢

      Next time, use only white yams

      You sun dried, that's why. Dehydrator would have given you a different and better result
