Upon publishing our video tutorial on how to process yam flour (elubo), some of our fans specifically requested that we teach them how to process poundo yam flour and as usual, GFB gladly obliged.
•
But let us clarify this upfront that yam flour (elubo) and poundo yam flour are both processed from yam, which belongs to the genus Dioscorea (family Dioscoreaceae). However, the method of processing each of them distinguishes one from the other.
•
It might interest you to know that once you fail to judiciously follow the appropriate processing method for any of the yam powder, you won’t get the right final outcome you desire.
•
It is also noteworthy that yam (Dioscorea) is totally different from potato (Ipomoea batatas) 🍠 as portrayed by some peeps.

Que buen tips para preparar arina de camote 🍠🍠 es muy bueno sin gluten 🤗🖐️🌹
Thanks. Write in English for easy understanding
Firstly, you need such equipment like: weighing machine; slice and grating machine; milling pounded yam machine. Thus, yam flour processing includes: washing of the yam; grating of the yam; milling of it and packaging. Consequently, the production process of pounded yam flour is: purchasing of high quality white yam; washing away the sand on the yam tubers; peeling of the yam tubers; then washing of the yam tubers; cutting and grating of the yam tubers; grinding and sieving of the granule; finally, packaging of the yam flour in branded package.
Those are great tips for peeps that want to go into large scale production of yam flour.
But don’t forget that blanching/parboiling the yam is important to prevent them from changing colour during the production process.
Please we need to talk about this I want to go into the business please your number please
Please what will happen if the yam was cooked @global cook food
U will not get the exact color,so u need to parboil it not cooked
That’s so amazing ❤

Hi my dear friend I’m continuing supporting you stay in touch 👍😍
Quick one, after the 5 minutes parboil, will it become soft a bit? Or it should remain hard like how you put it in?
@@rems_andrew Hi, the yam should remain hard as shown in the video. You are only parboiling the yam and not cooking it, hence you need to monitor the level of heat being used to parboil the yam. Best regards
@@Globalfoodbook1 yippie thanks
This is a very neat, simple and straightforward method. Please, where and how can I get a good food dehydrator? Thank you 💖
Thanks for the compliments. Check your local market, or Amazon
Do we have to mix starch with it to make it looks more like the real pounded yam? The video is an eye opener... Thank you
No, you don’t have to mix it with starch. To make the real Poundo, you can follow the method I applied in this video czcams.com/video/qLez5i4yxbg/video.html
Thanks for watching and for your compliments
can one sun dry it
Well done it's a good work pls where can I purchase the dryer.
Thank you. You can buy the dehydrator via Walmart, amazon or ebay. I'm sure there are several brands of food dehydrators that you can find in the market. All the best.
Your blender did a great job.... Please what product is that?
Thanks for your compliments. The blender used is Vitamix A3500 Blender: amzn.to/35fA5O6
Good job 👍 pls can one sundry if there's no dehydrator, then for how many hours?
Yes you can sundry it. Sundry it for as long as it takes to get thoroughly dried
Please let me know what kind of brand is the food processor it look good ones 👍🏾👍🏾
It’s Vitamix a3500
Thanks for the presentation. But, can one use Oven in place of Dehydrator.
You are welcome. If using oven, use the lowest temperature
Do you recommend any commercial equipment for this?
Please research about it. Best wishes
Great 👍 can one sundry
Thanks. Yes, you can
Thank you so much for this recipe
But why do I have to boil the yam for about 5 minutes before sun-drying it and eventually blending it
You parboil the yam to prevent discolouration and to aid faster cooking when eventually converted to flour. You are welcome
Thank you so much for adding value.
It's so inspiring ma'am.
How does one preserve the Yam Flour???
Hi Tunde,
Thanks for your compliments. It’s my pleasure to share.
To preserve it, store in an air tight container and use when needed.
Cheers
My first time here
Thanks ma for this ...
How long will the powder last without preservatives?
Pleasure to have you here. Once thoroughly dried, it can last over one year and counting
Amazing... Please how do i get this dehydrator machine?
Check your local market or Amazon, Walmart
tanx dear what if u do t have good blender can u use cumacial blender , and if u don't have dryer can u use sun to dry tanx
Hello Sandra, thanks for reaching out. Use the blender you have but try to sift the flour so that you can get fine powder. You can dry them under the sun too.
Where can I get the dryer please? Nice one
Depends on your location but you can on Amazon. Thanks for watching
You can get it on jumia or konga
@rahinat yusuf yes, you can dry the yam under the sun
Please, can I use baking oven to dry the yam
Not ideal but if you must use it, use the oven’s lowest setting
God bless you for this video Madam.
How does one know if the yam had dried properly to avoid moisture?
Does it need any further preservatives?
Many thanks Ose, for your wonderful prayers and may God bless you immensely too.
Once dried, they feel like dried chips without moisture. You don't need any preservatives.
Pl inform where I will get this dehydration machine
Walmart, Amazon
What is the name of the blender you used and how many watt?
Vitamix A3500
Where can I get the dehydrator and the grinder?
Check the market or on Amazon
Can you use an oven instead of a dehydrator?
Use the lowest settings
Yam slicer also is it available in Nigeria and where possibly ma how much, the Lord increase your health and wisdom
Thanks for your compliments. You can check your local markets for slicers.
Please, how much, and where can I get this hydrator in Nigeria?
I can’t say precisely where you can get this dehydrator in Nigeria. But check at the markets. Any dehydrator can work. Alternatively, you can dry the yam under the sun.
@@Globalfoodbook1 Thanks
Can you put it in fridge after grinding it ...???
You don’t have to put it in fridge if it’s thoroughly dried. Preserve the flour in a dry container
Weldon ma'am pls can I use microwave to dry it if I don't have dehydrator?
Thanks Comfort. I haven’t tried drying yam in a microwave but you can try it with small quantity to see how they turn out. Alternatively, you can dry them under the sun.
Good evening ma, I tried out the pondo yam flour by following the steps here but it turned out like Amala. Please what did I do wrong ma?
Oh my goodness. Sorry to hear that. It could be that you didn’t start drying the yam immediately after parboiling. Or maybe the specie of the yam you used.
Please how many hours am I going to soak it in the water
You aren’t meant to soak it in water. You leave it in water once you peel it, while slicing it before transferring it to a pot to parboil for 5 mins
👍
thanks
What of those without dehydrator
Dry under the sun ☀️
Thank you for this content. I tried it but the yam still turned dark after blanching. Guess the enzymatic reaction still continue after blanching. How do I solve that?
Oh my goodness, sorry to hear that. Did you leave the yam in water all through the time you were slicing them? Did you dry the yam immediately after you finished blanching them?
@@Globalfoodbook1 the yam was in water all through the time I was slicing it. I transferred it to dehydrator immediately after blanching.
It sounds strange to hear that you followed the process accordingly and yet the yam turned black. Now I’m speculating that it could be that the specie of the yam you used isn’t a good one or that the settings of the dehydrator you used is too harsh on the yam.
I’ve had many of my fans tried this method and came back to me with positive results. Some of them even shared the pictures of theirs with me.
I suggest you try again with another yam. Maybe dry them immediately after blanching under intense sunlight to observe if there is an improvement. Remember to spread out the yam. Don’t place them on one another. Slice the yam thinly for easy drying. Don’t overcook when blanching.
I hope it works out well for you. Keep me updated and all the best.
@@Globalfoodbook1 I'll certainly do and keep you informed of my progress. Thank you so very much.
Awesome 👏
You are welcome and I wish you the very best!
Hi am a stay at home mom,If I want to start food processing buisness would I have to put preservatives ?
Once the yam is thoroughly dried, the yam flour can last for over a year. I don’t know much about the preservatives
@@Globalfoodbook1 thanks ma'am I think I'll go with this your recipe I just pray people buy oh ,thanks alot
So we can't sun dry it ?
You can
DOES THIS TASTE DIFFERENT FROM THE AMALA ?
Yes
What specie of yam is best to use
Any yam specie that is in whitish will work
I’ve tried the white ones I’ve been able to find and didn’t work
You probably didn't blanch the yam first or dried it thoroughly. Follow the steps shown in this video accordingly and it will work. Best wishes@@olivia17ify
I actually blanched as instructed and dried as instructed. I got the flour as you did in the video but when I tried to make it into poundo the first yam was slightly bitter and the second was like starch
I don't know why yours turned out bitter but any regular edible white yam should work. For making poundo, stir your desired quantity in hot boiling water just like I did in this tigernut fufu video czcams.com/video/qLez5i4yxbg/video.htmlsi=hzhSUZ4gxVSBXt12 Best wishes! @@olivia17ify
Can microwave be used ma
I haven’t tried using microwave before
Good afternoon ma from Nigeria thank you for this video
Please I want to start the poundo yam flour business and potatoes flour business
Please ma how can I persevere it for commercial use ?
You are welcome. Well done on your new adventure. For commercial purposes, you will need food processing machines and food dehydrators.
Please can I use the poundo yam method and elubo method for elephant foot yam as that's what they readily have in the UAE
To prevent oral toxicity/itchiness as a result of the elephant foot yam, I recommend you first soak them in tamarind water before completing the rest of the poundo yam method. I hope this helps.
I will make a video of this whenever I find the elephant foot yam.
Thanks for all your kind words.
@@Globalfoodbook1 thanks huge
@@valerienkoli5898 You are welcome. Let me know how it turns out. Cheers
I tried it, sun dry it but changed colour to black.
Follow the steps in the video
so basically Amala you ferment the yam, poundo you boil the yam
Yes, yes 👍
Please try as much as possible to wash your yams before peeling ❤
Thank you
After trying the processes, during the course of sun-drying, all the yam chips started changing color
Probably you didn’t parboil the yam the right way or it could be from the yam specie
I parboiled the yam, sundry it but it turned to amala when I cook it 😢
Next time, use only white yams
You sun dried, that's why. Dehydrator would have given you a different and better result
I tried this process, it turned brown color and resulted in amala.
