Hey, so I used your recipe as a basic guide and threw together something very much like it. Instead of the carrots and yams, I put potatoes in there and put it in the Traeger for a little over an hour at 375. I had the thermometer in, my wife got home from work, had a minute to unwind, and in a few more minutes it read 155° inside. Bam, out it came, sliced up and here you are, Honey.

@Island Vibe Cooking , not only is a meat thermometer necessary but if you put that pork loin on a roasting rack (even an inch above the the bottom of the pan) the bottom will brown and crisp up so much more than meat that is sitting and cooking in liquid.

Did you cover it with foil wrap? Cause it doesn't say it and I'm gonna make it for tonites dinner
@@yessicarolina76 , I would not cover it unless it starts to get too dark near the end of cooking, and then I would only tent it. You don't want to steam it, you want to roast it.

This is way overcooked. Pork should be pink in middle. Looks very dry. Seasoning sounds great though.
It looks like you was struggling to cut it as if it was dry
