4 Levels of Samosas: Amateur to Food Scientist | Epicurious
Vložit
- čas přidán 5. 12. 2022
- We challenged chefs of three different skill levels - amateur Emily, home cook Rinku, and professional chef Dalia David - to make us their best samosa recipe. Once each level of chef had presented and tasted their creations, we asked expert food scientist Rose to explain the choices each made along the way. Which samosa are you reaching for between sips of mango lassi?

let's get real. Emily is no longer a level 1 chef-- making her own chutney... blooming spices and knowing why you do that, she's progressed. I look forward to seeing her appear on a future episode as a level 2 chef!
What I want to see is a graduation ceremony for her. Maybe frank gives her a diploma and a handshake. She's come a long ways since the french toast episode.
She is no way close to the complete flipping amateurs on the ramen or porkchop video
I agree! She needs to be promoted! 💯
If I were on the show, I would be a level one chef. I’ve been a professional cook for 19 years but most my cooking comes from my home. I think the idea of level 1,2, and 3 chef comes totally from the availability of ingredients, availability of time, and availability of money. I respect the absolute hell out of every level and chef on this series but the real heros are the level 1 chefs
@@drewvance8244 She needs her own Star Wars tasting spoon
The way Rinku looked at the camera when she said “Yeah these are my daughter’s favorite….” … she literally warned the Level 3 chef not to whine about the dang cauliflowers. 😃😃😃
Level 1 is the only OG samosa, Why is the level 2 lady making that noise ?
@@name_dropper8112level 2 is the bengali's OG samosa😁....I'm bengali
@@arindamn4880 Nah, Veg chop > shomosha. Especially with beet root
@@name_dropper8112 it's your preference...
And yes veg chop is originally made with beetroots
@@name_dropper8112 🥱 go tell that to your level 1 mom
Emily is a level 2 chef who just doesnt want to work too hard which is a mood
In one of the videos on her channel, she said something like, "Level 1 is a state of mind."
She's been featured as a level 2 chef in some episodes, but she's clearly not as experienced in samosas as the other two, hence the level 1 I think
@@a.arrondel6379 She has never been a Level 2 chef. She has been a home cook on Swap, but that has no "levels".
@@defaultuser1447 I mean she made a pretty bad burger in that one episode so maybe she got better as the series went on?
The level 2 chefs are my personal favorites, they always bring a mix of excitement and joy and they just make you feel loved
I'll be honest, I couldn't stand the lvl 2 chef's voice.
@@Hortonscakes I think the voice is like that bcz maybe they went to US at late age and if u speak fast then u fumble a lot. I have seen ppl advising to speak slow so that mind gets time to switch between language bcz u often think in native language. Some people still sound good that way but her voice got mix of wrong things I guess and it is kinda a hugh pitched voice so it is definitely not pleasant to the ears
Me too! Except Chef Saul. He’s awesome.
@@Hortonscakesreally? I actually want her to do audiobooks
@@hopegold883 I love Chef Saul! ❤️
Honestly cauliflower in samosa is very much authentic Bengali take on samosa. They used to be really popular in metro cities before more just potato filling became more popular due to Northern state immigration taste. You can still find them in mainline towns and villages . Cauliflower, peas and fried peanuts in the filling is beyond delicious.
Shinghara! Saw them being made on Bong Eats Channel.
@@Janani_Kannan yes! Damn it brought back memories of bygone Kolkata summers. They need to bring cauliflower filling back!
Cauliflower and peas samosa are a winter street delight in Assam as well.. Just love them..
In West Bengal * not in Bangladesh
just come out of kolkata.. other parts of west bengal never make cauliflower laden sweet tasting singaras...
Emily is a representative of every one of us. You know you could do it, but sometimes you don’t want to 🤷🏻♀️
I think what epicurious should start doing is have all the chefs try each other's!
As an Indian I was way to scared to click this time. Finally epicurious understands we need indian pro chef for indian food.
I was scarred from the biryani video
As someone who is familiar with Indian food, you're not alone.
The Biryani episode scarred me for real
Yeah I refuse to believe dalia is indian she doesn’t even know how to pronounce maida
@@vihaanthespyninja7710 that's how south indians pronounce maida
Rinku is the auntie you'll be happy cooking with, but would not mess with how she does things. Just don't. Do what she says. 😂
Sometimes Emily is a level 1 chef, sometimes she's a home cook. WHAT IS SHE?! The people need to know!
She really should be permanently promoted to level 2 at this point
She’s more of an entry level two chef.
She's Emily and she defies definition
Emily Level Chef.
According to Emily herself, "I'm just an Emily"
1. Emily for the classic Samosas with the classic potato filling. 💯
2. Rinku aunty for our authentic spices and just being rinku aunty 💯
3. Pro chef for all the three top notch chutneys especially the tamarind chutney and the presentation 💯
All three of them slayed in their own way making SAMOSA the winner. 😌❤
the pro chef was the worst one.
so little chutney for that samosa.
@@Takkunda nah not really
…can anyone please explain why the level 3 chef mentions sulfuric acid in her recipe at 11:52?
@@mechadoggy IMHO I think she mispronounced. If Tamrind produced Sulphuric Acid, do you think people would live to tell the tale 💀
@@krishnasanyal7 …well if it’s dilute enough, then yes, I suppose
Rinku is a Queen! She’s absolutely fabulous 👏🏽
Emily is going from putting ketchup on everything to making her own daggum chutney.
Level her up!
honestly ketchup with samosas is so good tho- I'm a little disappointed that us ketchup lovers weren't represented in this episode
@@diyaraodrona4281 lmfao
The coordinated “mmm” when they took a bite was awesome
Gold star for the editor. Best part of the video.
level 0: buy them, fry them, eat
Edit:
Level - 2: delivery.
Level-1: Takeout
Level 0: (as you said) buy them fry them (air fryer, scared of deep fry)
Level 0.5: Buy them, deep fry them.
Edit 2 : I wrote the comment before seeing level 1 using air fryer in the video :-D
Level 0 puts them in the oven
Pro using Fleur de sel for everything: "I love the crunch"
*Proceeds to blend it into a smooth sauce
Indian here- I love Dalia!! Bring her back!! Also, Emily said “bloom” her spices. Y’all, she’s no longer lv1. I was really impressed with her.
Emily has come a long way, from burning a hamburger to blooming spices.
We are all so proud of you Emily
Rinku ji sounds like a caring aunty who sort of became a mentor to you.
If Rinku ji ever has grandchildren, she would be their favourite grandparent. She just oozes this calm and loving vibe that I got from my grandma (not calling you old Rinku ji)
I’m already addicted to this series, but wow! All three chefs made me feel like I could make my own samosas. And this trio were so charming and fabulous! Level 2 and 3 were new to me and loved them all. I especially appreciated the commenting on each other’s ingredients because when I watch I wonder about choices and hearing their responses was fantastic.
Loving the vocal support from every chef for each others recipes! Genuine and wholesome, such wonderful energy coming from this video!
Rinku aunty!!!!! , She's a very quintessential bengali aunty , love her 💕
Rinku is so wholesome she slayed
She seems like a sweet woman but I can't stand her voice, it's like fingernails on a blackboard 😖
All the level samosas actually look like samosas!! Yay!
The cauliflower and peas samosa is a winter street delicacy in Assam as well.. Just love them.
Bengali here - Rinku's is straight up legit out of all the three.
Her Biryani is also the most authentic one of the three levels. And approved by Uncle Roger too at that!
exactly, even the dough she made was perfect
Rinku, our level 2 chef, I feel was at par with Dalia our level 3 chef. And all the 3 types of cooked samosas looked delicious. I can eat them all!!
And u can tell Rinku is Bengali by the way she speaks in a mellifluous way..
Auntie Rinku is back! I LOVE HER
Mrs. Rinku… I am here for the Indian Julia Child Vibes… Also, you made the best looking Samosas and Chutney 💜
Good comparison 😮. I am here for all the aunties teaching us how to cook 👩🍳
level 3: they didn’t have air fryers 1000 years ago. also level 3: i’m going to use this food processor right now
But Level 3 is quiet superb is she not? I love all kinds of Samosas especially the chutneys with tamarind 😉😉😉
AN INDIAN PROFESSIONAL CHEF, OMG 💝

Redemption from the biriyani episode!
@@animesoul167 that episode scarred me
@@animesoul167 For real. I think that's why they made her say growing up in a SOUTH ASIAN household as the very first sentence, to make sure people accept her! ☺️
More Rinku please! That voice, that voice I love that voice! Rinku is 100% an optimist!
Emily is a star! Nuf said!
And I am happily waiting to see more of Dalia in the very near future!
This was a most excellent trio! Loved it!
Omg am I the only one who finds her voice absolutely intolerable? She seems really sweet but that voice hurts my ears. Is something wrong with my ears? 😢
@@anniestumpy9918 OMG finallyy someone said it
The level one chef is actually the most helpful about how to actually cook for home (on a time budget!)
I’m Somali so we call it sambousa and use meat. But I really love the Indian samosas, they’re 🔥🔥
I am muslim of kutchi [indian] origin, we also call them sambusa.
Emily was perfect for the L1 chef, she's progressed so much and in my knowledge, Samosas are like Rinku said "Not for the lazy cook". So much preparation, so many spices.
Just the spices and seeds themselves are so easy to mess up! If you heat them more than you should, you're going to get a bitter samosa and even 10 seconds are enough to ruin your dish.
Emily knows her way around some stuff now and I think she did a pretty good job!
They're not fried eggs and canned peaches people, this dish takes time, skill and attention, that in the end pays off with one of the best snacks you can have!
Greetings from Mexico!
All 3 looked fantastic, but I'm a sucker for cauliflower, so if I could only have one, I'd go with Rinku's samosas. That spicy red pepper chutney that Dalia made would be hare to pass up on though.
Man sorry to tell you that chutney is not spicy at all. Kashmiri chillies are just for colour. It's basically like paprika. Adding colour but no spiciness.
@@pepe-gfv2 good to know, I thought it was spicy 😞
Thank you Epicurious for finding Indian chefs to make samosas...🥂🥂
Never in my life have I heard of this. Guess I will be trying it soon , thanks Epicurious!
Rinku, Chef #2, is so cute 🥰. She’s so wholesome and makes me smile 😊

One day Emily will introduce herself with "Hi! I'm Emily. You know who I am."

Emily and Lorenzo makes the episode more exciting to watch 😊
At this rate, Emily is going to be a level 3 chef in no time
I LOVE Rinku’s voice! She sings as she talks…
I am Indian... I love Emily's attitude and positivity.. and her healthiest samosas... yummmm... I am gonna make the air fried one today for the first time... Thank u for inspiration Emily... U are level 1000000... I love ur positivity
I made them yesterday… crunchy and damn yummy!!! Must try the air fried samosas… u can also try bhavnas kitchen’s oven baked samosa from kawan paratha… best and yummy… love them both
Yup and that's original proper samosa lol
In a traditional Samosa, the potatoes are boiled first, roughly mashed, and then put on the pan for shallow frying. Rinku's cauliflowers went in after the potato - mistake. Cauliflowers have to be fried separately and then added to the potato later. Also, if your samosa crust has too many bubbles, the dough is not tight enough and needs more ghee or oil.
For the first time, all chefs made something very close to the actual thing. Emily plz fry the samosa, its a comfort food! But overall this is much better than that abysmal biryani episode.
Emily is hilarious. What a wonderful personality.
Why don't you do written recipes for each chef? I want to try some of these! Plus it would be good funnel for traffic to your website so seems like a no-brainer.
Everyone did a great job. I’d loved to have seen them all try each other’s on this one.
Level 2 Chef is adorable, God bless her.
I also want to say that the cooks commenting on each others' work is a very welcome change in the editing.
I love how everyone made their samosa! Epicurious definitely learned that they should probably get Indian chefs for Indian food. Dalia is a South Indian like me. And Emily made my favorite chutney, though my mom used Pani Puri masala in it.
I'm South Indian too!
I loved Rinku a lot too, I would love to see her in more videos! and more Indian dishes with Indian pro chefs :)
I couldn't agree with you more
I want them all. Don't care which level they are on - everything looks super tasty.
I'm from Durban, South Africa, our 'Samoosas' are rather different... It's amazing how things have changed since our Great grandparents came from India.
Why not preserve your names? You don't have to be ashamed to have an Indian first name
@@varoonnone7159 You don't know if hes named after someone or why he has that 1st name.
@@varoonnone7159 Also, Joshua can totally be an Indian name. I've met many Indians, who live in India, with that exact name.
@@varoonnone7159 I hate that too. I live in the states and a lot of Indians change their name to fit in or shorten it and all. One even changed his last name - From Balasubramaniyam or something to Balasun lol
@@rosemiriam6965 nope it's not Indian name
Rinku's samosa is the most authetic east Indian samosa aka singra. Reminds me of home! Honestly I want some now
emily boutta be a level 2 chef !!
YES SHES BACK I LOVE RINKU
I love how much tradition and passion Rinku put into showing how she makes her samosas. 🇮🇳
Go Emily!! All that knowledge from the home cook/chef exchange are showing off.
Also, this is one of the only videos where I would actually want to eat all three finished plates. They were all plated beautifully and I bet they all tasted great!
I ate my first samosa a few days ago only to find this video today. Fell in love with them can't wait to try to make them.
What were your fillings?
I love this episode
THE BEST EPISODE EVER
Rinku's voice sounds like she's smiling! Definitely put a smile on my face the whole time I listen to her 😄
it sounds sing-songy as well
Rinku! I'm so excited to have a video with her again 😄
level 2 chef knows the technique more than level 3 chef.
I have been waiting for this for so long. 😁
Traditionally the condiment used for samosa is Sweet Tamarind Chutney but we use Ketchup at most Indian homes.
Bruh...have never seen anyone use ketchup...always tamarind chutney...
Yummy, love me some tamarind chutney. Also, I highly doubt that's traditional, since tamarind chutney is just so South Indian.
Maggi!
Ketchup samosas sound nasty ngl - cilantro chutney is the best
@@CosmicDoom47 They're not bad, just don't overdo the ketchup.
As an Indian i whould eat Emily's the most bc it's the most simple(i like simple foods)Soo yeaa 👍
Thank you for existing Rinku
Yes. I needed this. Samosas are my fav
I haven't even watched the whole video yet. I just saw Emily and instantly thought ketchup samosas 😂
I just finished watching 😭 Emily forgot the ketchup
Rinku is awesome she's so wholesome ;^;
Chaat masala and aam chur with lamb is definitely a CHOICE-
i wish we'd get their actual recipes and measurements when these videos (and the swapping ingredient videos) came out.
Emily Leveling up!!! She’s a level 2 chef now!
Tamarind chutney is by far the best chutney to have with samosa.
Also Emily has progressed so much from past videos, she should be promoted to level 2 chef
Rinku is hilarious 👏 that constant smirk and intonation
Really happy about the skill level of each chef.
I could watch Rinku cook and hear her lovely voice for hours 🥹
When Rinku said her daughter would be proud of her, I teared up a bit idk why 😮
I freaking love Rinku. She needs to be in more videos.
Dalia is an absolute delight to watch work. She is so diplomatic in her comments. I want some lamb samosas NOW!!
@Epicurious1 Please stop scamming people. Neither Bhagvan nor Allah nor Jesus condones scamming people.
As a Bong I love Chef 2’s Shingara aka Samosa a lot, also given the fact that it's my mom's nickname makes her recipe very appealing. But for someone who loves Mangsher Shingara the most, the Keema Samosa it is for me! Can we have the Level 3 Recipe Epicurious?
Shingara,,,,,,,,,,,, finally someone said it!
Yes. I've been craving shingaras ever since I left Kolkata. I never had non-veg samosas though.
@@AthenaChowdhury Not very different compared to something like Chicken Pakodas. Just the difference is that one comes with a smoother shell.
@@UlfricStromcloak gotcha! Btw, I have had chow mien shingaras xD
Gotta say that all 3 of these looked so damn good!!!
loved the uhummm sound at 13:10 ☺
I wish we could see them trying each others samosas :)
Actually I'll tell you the amateur recipe for samosas: you go to an Indian grocery store or a large supermarket and grab some from the freezer section. In my opinion if you're making samosas from scratch you're definitely a super-expert home cook!
This made me so hungry! And excited to add another item to try to make sometime soon
Love it.
I looooove every episode Rinku is in. I want to hang out with her and hear all of her wisdom
Oooo, Rinku back with the fresh haircut!! It's so cute at that length!!
oh and all the samosas look delicious too, I guess 🤭
The lvl 2 chef is so wholesome and brings back memories of my neighbors when I grew up
I really like this channel, I'm inspired to cook on my CZcams channel 😄
8:08 thought she was boutta start singin!
Bengali samosa recipe? - 'bong eats' channel rocks 👍🤟✌️
And oh, it's tarmarind chutney with it
Man they all did great making samosas and Rinku's samosas are the best for me because she made it the authentic way
I want to be Rinku, I guess but I am an Emily. I love the airfryer idea! Thanks mate, I am going to try it
My only issue I suppose is how these samoosas turned out..
I know it came down to the dough they used, I'm used to the thin pastry leaves that are used.
