PRETZEL CREAM CHEESE STICK RECIPE 🇵🇭

  • ● So this is it, guys!! Finally like one of my favorite menus at Auntie Anne’s pretzel, the almond crunch 😋 the looks, taste, and how it process, I did what I could do to produce this pretzel. I'm very happy and proud, finally, I won't buy it plus I'll share it with you guys so you won't buy it either! The taste is 100% legit!

    🥨Ingredients
    ▪︎Dough
    • All-Purpose Flour 2-1/4 cups
    • Light Brown Sugar 15g
    • Salt 1/2 tsp
    • Active Dry Yeast 1 tsp
    • Water 30ml
    • Butter (Melted) 15ml
    • Baking Soda 2g
    • Plain Yogurt Milk 65g
    ▪︎Almond Croquant
    • Sliced Almond 100g
    • Sugar 90g
    • Butter 20g
    • Whip Cream 50g
    ▪︎ Cream Cheese Filling
    • Cream Cheese 140g
    • Condensed Milk 25g
    ▪︎Soda Bath
    • Hot Water 100ml
    • Baking Soda 25g
    • Top Water 100ml
    • Melted Butter 2tbsp
    🥨Instructions
    1. Finely chop the almonds with a knife, You should end up with a mixture of very finely chopped and some slightly larger pieces.
    2. In a pan put the sugar, butter and cream and set on fire on a low-med heat. Keep stirring until all the butter has melted.
    3. Add the chopped almonds and stir until everything is well blended, continue cooking until it becomes dry and it set apart.
    4. Move into the tray then spread. Let it cool down aside.
    5. Put the room temp. Cream cheese into the bowl, cream it and add the condensed milk and combine well. Move the mixture into the piping bag and refrigerate until ready to use.
    6. Luke warm water into the bowl together with the sugar and yeast and combine, this process called activating the yeast. Once activated put the melted butter, yogurt, baking soda, and salt combine using a whisk and put the first cup of flour combine using whisk then change the whisk into a spatula then add the next 1 cup of flour combine well. Add the remaining 1/4 cup of flour into the mixture and combine using hand. Move onto the bench and knead the dough until smooth and elastic about 8mins. (if the dough is way too dry don't hesitate to add a bit of water at a time until you reach the right consistency)
    7. Put the dough into a lightly greased bowl and let it rest aside for 30mins.
    8. Preheat the oven to 210°C
    9. Cut the dough, roll, and stretch using your hands, roll about 20cm strip. Flatten using your fingers about 4inch wide.
    10. Spread the cream cheese down the middle of the dough strip, leaving a 2-inch border on each end. Fold and pinch the dough around the fillings along the entire strip, ensuring the ends are closed. Roll slightly to seal and lengthen. Carefully form a pretzel onto an "S" with a 3 equal stick when cut. Cut the pretzel and line onto the tray. Repeat until done.
    11. Prepare the soda bath using hot water and baking soda combine until all the baking soda dissolved and then pour the topwater so you can use it instantly.
    12. Soak the pretzel one at a time and line it onto a paper towel
    13. Quickly dredge each stick onto the croquant and line the dredged sticks onto the tray and bake it for 190°C for 10-12 minutes or until it become golden brown.
    14. Remove from the oven and brush with melted butter and serve.

    I just did this recipe.. its awesome! My only problem is.. its kinna hard to put the filling and roll it again... its bursting 😅 thank you for this its really great! am gonna do it again..

      For this recipe you need 2and 1/4 cups of flour equivalent to 274g. 🥰

    Just got through making this and it is delicious! My pretzel didn’t come out as nice and chewy as auntie anne’s. Any idea what’s going on?
    I’m thinking either I didn’t kneed enough, or allow something to happen with the dough.

      I suggest to put the dough to the steaming soda water under the fire. 🥰 for more chewy texture.
