  • Çiğ Köfte is the bestselling street food and an integral part of our culinary culture. It can be made in two ways, with meat or without meat. In the classic way you cook the meat by kneading with bulgur and spices using the power of the hand. However, today we are going to make it in a vegan way and instead of the meat we’ll be using the gorgeous taste and nutritional value of different kinds of nuts.

    3,5 cups fine bulgur, 500 g, dark bulgur would do great as well
    3,5 cups hot water, 875 ml
    1 tablespoon tomato paste
    1 tablespoon hot pepper paste
    100 ml tomato puree
    1/2 cup olive oil
    1 teaspoon cumin
    1 tablespoon isot pepper, isot aka Urfa biber is a dried chili pepper cultivated in the Urfa region of Turkey. Often described as having a smoky taste.
    1/2 teaspoon black pepper
    1/2 teaspoon salt
    180 g mixed nuts, almond, walnut, peanut, hazelnut would do great
    1 large onion, pureed
    1 clove of garlic, pureed
    3 tablespoons soy sauce, optional
    For serving,
    Lettuce
    Lemon, wedges
    Radish, sliced
    Sprig onion
    Fresh mint
    Parsley
    Lavash
    • In a large bowl, combine the bulgur and hot water. Cover with a plate and set aside about 10 minutes to let the bulgur soak the water and cool down.
    • To make the delicious sauce, mix the tomato and hot pepper paste, tomato puree, olive oil, cumin, isot, black pepper and salt in a bowl.
    • Pulse the nuts in a food processor until the mixture turns into flour.
    • Then take out the nuts from the processor and add the onion and garlic. Puree them and set aside.
    • After bulgur soaks the water and cools down, transfer into a çiğ köfte tray or an oven tray. Çiğ köfte tray is a special tray to make çiğ köfte which doesn’t have a smooth bottom, so it has more surface area to make ease and fasten the kneading process.
    • Pour the tomato sauce on bulgur and start kneading.
    • Rub the mixture with the base of your palm and support the mixture with your other hand to put the pressure on the mixture. Knead for about 5 minutes.
    • Add the onion and garlic puree and keep kneading for another 15 minutes.
    • Then add the nuts into the mixture and keep kneading for another 10 minutes. Make sure that your çiğ köfte is not dry. If it is dry add some ice cubes and continue kneading.
    • Depending on taste, you can add some soy sauce, but I need to tell you that is not something traditional in Turkey. It is a suggestion if you can’t find good quality ingredients.
    • After kneading, grab walnut size pieces, place inside your palm and squeeze gently to give the çiğ köfte shape.
    • Serve with lemon wedges, lettuce, parsley, fresh mint, spring onion, radish and lavash in a tray or make a wrap. It would be a great vegan treat for your parties!

    For such a long time I was omitting trying cig köftes and kisir just because they didn't look that appetizing to me on screen (everyone was saying how tasty they are, I know), but man, oh man, once I tried them, I understood why they were saying so 😍it's delicious ngl 🤤

      there were cig koftes's made with raw meat. you're possibly missing all the real joy. I really miss that now every cig kofte is 100% vegan coz raw meat is forbidden in food.

    I'll need to save this recipe for when I have plenty time but I hope to try it because it sounds and looks so interesting and delicious. I'm so glad you don't only focus on quick or complex recipes but give us plenty variety. I made some pomegranate sour after watching your video about it and wow it so good I need to make more while we have pomegranates because I've already used quite a bit of the batch I made!     Vegetarians will actually find that Turkey is a vegetarian friendly place despite the country being more well known for kebabs. When I was there , I had no problem finding lots of veggie dishes in their locanta - which is like Turkish style restaurants. Wana visit them soon

    Oooh! I don't know if my arthritis will be able to handle this, but I'll have to try it out and see-- I'm phobic of getting badly burned using the oven & stove bc of a few bad experiences in my childhood, so this kind of thing is def up my alley. If my hands can't handle it, this might be what makes me get a stand mixer, though.

I have been looking for a good meat alternative that holds together. I find most bean based are far too runny, even after baking them to remove moisture!

    I got isot pepper in Australia under the name urfa biber, and it's one of the best spices out there. I like to put it in my pilafs, roast pumpkin, and tomato-based stews. I look forward to using it in this :)

    Hi dear Refika! I am really so happy with your recipes and with your kitchen clues! I now have a video request. I love the Turkish savory cornbread with feta cheese, but I was looking for a recipe that fits a twelve muffin pan, because that would be so beautiful to serve and ready preportioned to freeze!     Nice, I have all the Turkish ingredients bar the very fine bulgur. Though I think I can get that online if I look around. Sounds like an ideal spring/summer dish... so maybe not today after the storms & snow we've been having in the UK this week.
    Loving the sound & idea of all the fresh tasty ingredients. It's one of the few Turkish dishes that you've made on the show that I've never tried before. So I really have to eat it now.

      Fine bulgur is also a good storage food. To make it edible, you only add hot water and salt and wait.
      So you can use it as a carbohydrate filler/base for whatever else you have as a side. Like canned beans etc... It's application is sort of like ramen cups, but without the seasoning, and much healthier.

      Çiğköfte is a dish that can be eaten in all seasons. There are shops selling Çiğköfte on the streets, it doesn't matter when you eat Çiğköfte in the morning, noon and evening. You should definitely try it🤍🤍🤍

    I made this not long ago but instead of cumin I added sumac and allepo peppers with Urfa biber. I add pomegranate sour. If you use a kitchen aid, use a box grater for the onion and make sure you drain the water or else you'll never get the bitter out.

    Hello Refika, congrats for the effort, I try to make most of the dishes made by you, I get impressed with the type of Copper tinted utensils you use, I am travelling to Istanbul in April, can you please let me know where can I find those type of utensils in Istanbul.     So, I keep calling Quinoa "Bulgar" mostly because I love the word (especially when Refika says it), but looking at that bulgar in water, my first thought was, "Quinoa".... Hmm

    I haven't even seen the video yet but am so happy to see Vegan meatballs! In India Street food rage is- soybean flour tandoori smoked soya chaap tikkas that are difficult to replicate in home kitchens so this video was manifested for me ☺

    We at my home make using besan or flour of Bengal gram. One may add other types of lentil/ legume flour or coarse ground lentil/ legumes too.. and some veggies if you like . It's completely vegan and gluten free too.. do try ' thali peeth bhazani' and ' upwas bhazani' these are flour mixes, the former is made of various lentil and legumes and the latter is made of amaranth, water chestnut flour etc specially meant for making fasting day meals..

      We actually have another version which is made with half bulgur and half red lentils, (mercimekli köfte) it has a milder taste and goes well with a onion heavy tomato salad

    Excellent first debut we enjoyed the duet very much. In London we have a white burgle or crack weed the very fine medium and coarse the brown one can I substitute please . I am going to use my Kenwood mixer 🤪👌👌
