  • Gözleme is an integral part of our culinary culture and loved by everyone. It can be prepared with various fillings like minced meat, cheese, potato, spinach, eggplant, mushroom or even with chocolate. Covered with thin crispy dough, it is a perfect comforting breakfast for the first day of the year, and we would like to show you how to make these gorgeous flat pastries at your home.

    Gözleme
    Difficulty: Medium
    Prep time: 20 minutes
    Cooking time: 5-10 minutes
    Dough:
    300 g flour (2 cup + 1 tablespoon)
    200 ml water (4/5 cup)
    1/2 teaspoon salt
    Potato Filling:
    1 tablespoon butter
    1/2 onion, diced
    1 potato, boiled
    1 heaped teaspoon red pepper paste or use salsa sauce
    1 pinch black pepper
    Cheese Filling:
    50-60 g İzmir tulum cheese, small diced, you can use feta or parmesan cheese as well)
    3-4 sprigs parsley, chopped
    1 pinch red pepper flakes
    100 g string cheese, torn into long strings, or any melting cheese like mozzarella
    Tahini Cocoa Honey:
    2 tablespoons tahini
    1 heaped teaspoon cocoa powder
    2 tablespoons honey
    50 g string cheese, torn into long strings, or any melting cheese like mozzarella
    Minced Meat Filling:
    200 g minced meat
    1 large onion, diced
    4-5 sprigs parsley, chopped
    Salt & black pepper to taste
    1/6 of freshly ground nutmeg
    • For the dough, combine flour, salt, and water in a bowl. Knead for 7-8 minutes until you have a smooth and elastic dough.
    • Divide the dough into four equal balls. Cover with a damp cloth and let it rest for at least 10-15 minutes. Meanwhile, you can make fillings.
    • To make the potato filling, boil the potato until fork tender. Add the butter and melt it into a large pan. Add the onion and sauté until lightly browned. Add the potato and mash a little with a fork or potato masher. Add the red pepper paste. Season with the red pepper flakes, black pepper and salt if necessary. Cook for another 1-2 minutes and transfer to a plate to cool down.
    • For the cheese filling, mix the İzmir Tulum cheese, parsley, and red pepper flakes in a bowl. Add the string cheese and mix it. It is ready to put into your gözleme.
    • For sweet gözleme, combine the tahini, cocoa powder and honey in a bowl. Add the string cheese.
    • For the minced meat version, heat a large frying pan on high heat. Add the minced meat to the pan and spread with the wooden spoon until they get brown. But do not stir all the time. Let one side to brown then stir again. You can also use pork, veal or lamb. Add the onion and turn heat to low and continue to sauté. Stir time to time for about 15 minutes. Minced meat will get perfectly brown, and onions will almost disappear in the pan. While cooking, add salt to your taste. If minced meat sticks to the pan, add a couple tablespoons of hot water and scrub the bottom with a spatula so you won’t waste any amazing flavour. At the end of the cooking add black pepper and grate the nutmeg. Let the mixture cooldown a little and add the parsley.
    • On a lightly floured surface, roll out each ball with a rolling pin into thin, flat rounds around 30-35 cm (12-14 in) wide.
    • Spread the filling into the centre of this flat sheet.
    • Then fold the top and bottom edges over the filling, making sure all the filling is nicely covered. Press edges together well to seal. Repeat the same procedure for the rest of the dough balls. You can also make bigger D shape gözlemes as well. Spread the filling to the half of the rolled dough and cover the other half on top of the filling, seal the edges by pressing.
    • Place a sheet or cast-iron pan upside down on the stove and heat. You can also use the back of an oven tray.
    • Place gözleme on the pan and cook for 2-3 minutes each side until golden brown. When a side is cooked, flip to the other side and butter the cooked side, this will keep them moist and increase the taste.
    • When you cook the rest of the gozlemes the same way it is ready to dig in. Don’t forget to eat your gozleme with Turkish tea or ayran.

    I come from a part of Kerala in India that has a very unique cuisine. It is said that my ancestors were men from Persia, who married the local women in Kerala when they came for the spice trades. I am no more surprised at the similarities of the dishes that you make, with the local delicacies my community is famous for. These dishes are not found anywhere else in India and we also have various versions of your perfect GÖZLEME. Isn't it beautiful how food connects and tells the stories of people from two parts of the world, bound by the love and quest for spices? Happy new year to all of you amazing people and I can't say in words how much I love your channels and hope that once this pandemic is over, I can visit Turkey and meet you all in person.       Beautiful!! Persian and Turkish have so much in common! When the Gokturk moved down across the Iranian plateau and the Seljuk ( from whence the Kayi Osmanlii come) set their capital at Isfahan, a great culture of food came about. Iran today still retains many of these foods. I loved your story!

      We have also same thing in Maghreb cuisine it s called mesmen but its done with semolina and we filled it also but not dry more solf and made with oil semoulina yeast water and long time of preparation

    Dear Refika, during my childhood in Central Anatolia (not far from the region your father came from), women used to make flat bread (yufka ekmek) in tandoors from sunrise to sunset for two/three days in a row. It was a custom to make gozlemes (we call it tandir boregi) for neighbors in the morning. Neighbors used to send their fillings, enough for 5-10 boreks, to the ladies at the tandoor. Three of the most popular ones for breakfasts were "salatali borek" (simply tomatoes, green peppers, onions, parsley, salt and black pepper), "yumurtali-peynirli borek" (just eggs and tulum cheese), and "sekerli borek" (sugar and butter).

    Wow! These are very similar to our Mexican quesadillas made with flour tortillas. We even make the potato filling the same way for our “tacos sudados” which translates to “sweating tacos” but we make these with corn tortillas. Very interesting how similar our cuisines are. Chef’s 💋

Every Christmas in my family we make a German dish from my moms family called Rouladen, but my (Turkish) dad never liked it much because it was dry and not flavourful. Refika, I have been listening to you and learning the theory about how to cook meat, and I applied my new knowledge to my moms old dish, shredding the onion, marinating, using the acid and covering it to cook it came out so good! 😋 my dad loved it 😄 really enjoy learning from your channel and I am sharing it every chance I get!

    Me and my husband absolutely LOVE gözleme. It is one of our favorites. Ever since we ate it in Turkey I've been making some at home like three times a year, with spinach & beyaz peynir filling (thankfully we have a store which sells Turkish ingredients close to where we live). It always takes us back to Turkey ❤ Hopefully this pandemic is soon behind us and we can come back to your beautiful country for real again. Mutlu yıllar! 🎉

    Hi from Finland. I were so lazy woman, I did few times gözlemes, lahmachuns and pides with ready yapma and filo dough, sorry. But they were anyway quite good, even wrong doughs. I'm really crazy for Turkish food, truly. I had those times many bough frozen filo and yapma doughs on my freezer, so that because I make them. I'm unfortunately so lazy to bake. But not to make wonderful Turkish food, I love it. In 18 years I visited in Turkey several times, and luckily I got always the real Turkish homefood, only two times I ate at restaurant, homefood is always the best. Thank you for your channel.     I loved the gozleme when in Turkey. Great back pack food. I would buy a few of them without meat so they would last for whenever I wanted a snack on a walk. So tasty. My favorite is the white cheese with spinach.

    Oh I love this recipe and will make this when you the weather cools down, currently 38C in Melbourne Australia. I made your Turkish kebabs and they are amazing. Happy New Year beautiful lady and I hope and pray that this year will be better.
