The economy that you've shown in this video (bakery n candles and then heavy taxes) is the perfect strategy for this map.. I tried all other options but only this worked for me.. Arabian swordsmen were the key to the winning this game. I don't know may be post update in 2021, now I could only create 3 wheat-farms. Yet this has saved my day

You can use the "Market" structure inside Town Buildings. Which has the ability to automatically buy and sell adjusted items.

You can also adjust the production and consumption of some consumables with the amount of popularity from the Rate section. By hitting the right side arrow Or by clicking on the popularity icon or the popularity number.

And by moving the mouse to the icon of each of them, its information is displayed.

I also think that hiring a regular archer and buying a bow is more expensive than hiring an Arabian archer without a bow. And I think hiring a regular archer can be cost-effective when the bow is in production.
Because in my game version, 80 gold is needed to buy 5 bows, and for 1 ordinary archer, when hiring 12 gold, in the end, a total of 28 gold is needed to hire a regular archer.
But an Arabian archer needs only 18 gold without the need to buy a bow.
From the "Manual" of the game, as far as I understand, there is no difference between a normal archer and an Arabian archer.

What you say is true partially.
However, there is a range difference compared to the normal and Arabian archer. To also point out that you still need to invest into making those longbow archers, which costs more resources and time. Whilst the Arabian one are "poof" ready to serve.
There the choice of archer is matter of tactic and so on.
