I’ve been to PLs in bklyn a few times. Obviously a restaurant is a business so they need to do as many covers as they can, plus it’s a tourist attraction. But yea they take a good steak, burn the shit out of it, cut it before it’s rested so all the juice comes out, and charge you premium prices. It tastes ok in the end but definitely not how I would cook my steak.
I've worked as a dishwasher and always hope he gets treated well at PL . Those black burnt butter plates would be more annoying than refried beans.

It looks like it. I would guess the butter/tallow they add to the plate carries the salt around when they do the table service presentation bit.
