How to make roasted pumpkin soup:
Step 1: Preheat oven 0:45
Step 2: Prepare pumpkin, onion and garlic 0:51
Step 3: Roast vegetables 1:37
Step 4: Blend vegetables with stock 2:13
Step 5: Add cream 4:06
Step 6: Serve with toppings and bread 4:56
Tip: Rub miso or curry paste onto your pumpkin before roasting to add even more layers of flavour to your soup.

You can get a similar result by cooking the pumpkin, skin on, in a pot, which I will still do because I add potatoes for the bottom layer. Remove and Cool the pumpkin and use a spoon to scoop out the skins. Keep the lid on and your soup stays hot. Limit the liquid and your soup will stay thick, I use sour cream and stir in parmesan because I do not like the pumpkin flavour. A stick mixer means only one pot to wash. I serve with "cheesy mushroom garlic bread" from 4 ingredients.
