⁃ VEGGIE POT PIES
1 tbsp olive oil
1/4 cup diced onion
2 tsp minced garlic
1/4 cup celery
1/2 cup veg broth
1 medium potato, diced
3/4 cup frozen mixed veg
1 1/2 cups almond milk
1 veg bouillon cube
2 tsp cornstarch (in water)
pepper & rosemary to taste
crescent rolls (4)
To a pan over medium high heat add olive oil then onion, garlic and celery and cook until garlic is slightly browned and onion is translucent. Mix in vegetable broth, then add diced potato and mixed vegetables. Pour in almond milk and add bouillon cube, breaking it apart and mixing thoroughly. In a separate bowl take 2 tsp cornstarch and add just enough water to dissolve the cornstarch then add the mixture to the pan to thicken the base. Season with pepper and rosemary to your liking. Transfer contents of the pan evenly into 4 ramekins. Top ramekin with flattened crescent roll, pressing the edges all around. Bake for about 15 minutes at 375F.

⁃ CARROT ‘DOGS’
5 medium carrots
1/4 cup veg broth
1/2 cup coconut aminos (or soy sauce)
2 tbsp apple cider vinegar
1 tsp toasted sesame oil
1 tsp liquid smoke
1 tsp mined garlic
1/2 tsp dried ginger
1/2 tsp onion powder
1 1/2 tbsp maple syrup
pinch of salt & pepper
Remove outer skin from carrots and cut to fit length of hot dog bun. Boil carrots for 5-10 minutes until easy pierced with a fork. In a large bowl mix remaining ingredients together then add carrots and refrigerate for at least 24 hours. Heat carrots in a skillet with a little olive oil or grill them. Enjoy.

I had to return to the video to share that I tried the vegan carrot dog and it was delicious. I was really impressed by the color (I allowed my carrots to marinate for 1 week in the refrigerator). It was so good that it really didn't taste like it was a carrot in a bun. Thank u for sharing again Kim.

@Ms. Understood Aikens I've tried this YEARS ago. I would say it tastes closer to a hotdog than a carrot! If you're a texture person (like myself) I think having it on a wheat bun helped. I also think chili helped and I also ate it with chips to help give it that texture. Also, if you combined it with potato salad and/or baked beans, definitely gave it a back yard BBQ feel.lol I love it the best on the grill, however cooking it on top of the stove is just as good. 100% recommend!

ketchup on a carrot....don't think I can bring myself to do it lol but it definitely looked the part for sure!
The liquid smoke makes the carrot not taste like a carrot and when you put ketchup and mustard on it, it really does taste like a hot dog. 👍🏻

I love most of your recipes!!! I love the pasta(I put asparagus and mushrooms instead of spinach), the tofu scramble(I put mushrooms in mine) and the buffalo cauliflower sandwich, I kicked it up a notch and did cauliflower buffalo wings(it was bomb!) I been a subbie for a few years, back when you had the two french braids in the back going up to the crown girl!! Lol I still can't do that....but I have a question. Tomato sauce gives me really bad acid reflux and sometimes gallbladder attacks, what would you recommend as a substitute?

Daiya cheese is the absolute WORST (to me) Chao cheese is 1000x better.....I do like the daiya mac and cheese sauce tho, they should put it in a jar
