My family makes a similar rice. We slightly fry up the rice in butter and with slices of Jalapeno (take out the seeds if you don't want it too spicy). Then we add the water, chicken bouillion, and a little bit more butter for flavor. We add the mozzarella cheese once the water is almost all gone and give it a little mix to incorporate the rice with the cheese. Then you turn the stove off and cover the rice to let it finish cooking and melting with the steam. If you are feeling extra, add more cheese on top! This rice is sooo FIRE. I like to make it when I cook Camarones a la Diabla.
I make rice all the time different types and I’ve never made it like this. When I do my tomato/Spanish rice Ibrown my rice and it doesn’t come out grainy and I ise a lot less water. So for 1 cup I do 1.5 cups water but if I’m using the tomato sauce I subtract the .5 cup because the tomato is already liquid. When I was in my trial stage if I did 2 cups water and the can it was soooo mushy. Also I have to use a pan I can’t do tomato rice in a pot 🤷♀️. Only my white rice comes out in a deep pot. I don’t think there is a correct way to make rice as long as however you make it,it comes out lol. I recently figured out how to do Indian rice and I’ve been non stop making that lately
I totally agree with the sauce can vs the tomato version Hispanics are used to. The sauce can is way easier and much more flavorful 🤤 ❤ I use the Mexican brand one!!

I have always liked my rice moist and I add more water too. I also stir it but I never wash it well just a quick rinse. I am sure this one is delicious because rice is great with monterey jack like on a burrito or in a taco.
You can also dry the rice by throwing it in the pot by itself & stirring it occasionally so it doesn’t stick, once it’s dry throw in the oil & roast it up a bit

My mom makes dry rice with the homemade tomato sauce.. I always thought it was good, until I got married my husband didn’t like it… he’s like can you make it more red & more moist lol sooo I make it non traditional now but it’s bomb 😅
My rice is definitely amazing... this is just a different way & type of rice.. I love cheese, so i would try this. But nothing like a yummy original Mexican rice.
