Finally, an upside to my crippling tempeh addiction.
So essential for health, it's found in only a handful of foods! Vegan is winning once again.
I love tempeh so much. It’s so expensive tho. I want to make it at home. Way too much work due to how much I would want to eat. haha
@@marley7659 you are worth it!
Tempeh already has some B12 and probiotics especially if it's also got miso 😊
$2.29 per 8oz pack at Trader Joe's.@@marley7659
A cool study that I didn't include in the video directly gave human skin cells ergothioneine and exposed them to UV:
"Our results suggest that L-ergothioneine not only prevents oxidative damage but also may enable *DNA repair* in the UV-irradiated cells."
In this sense it could theoretically slow photoaging and reduce the risk of skin cancer. pubmed.ncbi.nlm.nih.gov/19439218/
It's a pleasure making these vids for you guys and learning together!
This has very good promise as a sun screen agent..beyond that no.
NO 100 year olds are eating this with any regularity certainly none in the seventh day adventist study.
It appears used in that fashion to have beneficial effects for skin density and some other remediations of age effects as well.
This is huge! Been taking Polypodium Leucotomas and will be interested to add ergothionine (beyond what I’m getting in my daily mushrooms). Will have to check into tempeh-I’ve never cooked with it before.
Though I may add, the antioxidant theory of longevity enhancement has been largely discarded as a singular issue in the field.
Antioxidant's serve purpose but I liken it to exercise effects upon muscle....stress to include oxidative damaged, remedied by oxidative reduction intake in dietary items but without the exercise no muscle growth what so ever. And anti oxidants directly after exercise found to limit muscle growth in response to exercise.
As per example fasting producing longevity enhancement...a stress no antioxidants what so ever but oxidative damage still being produced by metabolic processes continuing.
What is the mechanism clearly the stress, alternated then by anti oxidants consumed after the fast is concluded.
This first shown perhaps in longevity reducing with increases in beta carotene and vitamin E in study.
Anyway antioxidents by themselves without a stress component (some foods serve this in purpose querticine resveratrol) to excess may actually not enhance longevity at all.
It iis a balance. but longevity specialty docs, typically not medical docs but researchers with doctorates, are qualified in this study and the current findings of this not plant docs nor common without this specialty nutritionists.
@@ronaldhumphreys8776Just humouring, but isn't it possible that even if 100 year olds or Adventists don't consume it and still got health benefits without it, consuming it could provide additional health benefits anyway?
Good vid. I commented a lot on ergo on the nutritionfacts forums around 2014-15, so maybe this vid is seeing the ping pong bounce around.
As lapsed biochemist, the fact that there's an evolutionarily conserved ergo transporter is huge. It means that ergo joins vitamins C & E, and carotenoids (like beta-carotene, lycopene, lutein...) as the only well absorbed antioxidants.
With respect to the flavonoids and other xenobiotic polyphenols, its possible that all their effects are not through the absorbed fraction, but through modulating the gut microbiota and hormetic effects at the liver. I'm really glad that the microbiome story rescued them, as its a much more plausible explanation for observed benefits of compounds the body actively rejects.
The main thing I'm aware of that I think was missed here is that ergo, as an amphiphilic cation, is preferentially concentrated in the mitochondrial membrane, the major intracellular source of reactive species. In this, its not unlike those Russian research antioxidants from the early 2000s that were synthetic amphiphilic cation electron donors; except ergo is abundant in some foods, remarkably safe, and something which we evolved over hundreds of millions of years to depend on.
I like mushrooms and make a point of eating some daily. I think they're the greatest omission from Dr. Greger's daily dozen. I especially like oyster and king trumpet mushrooms, the cultivated species with the highest levels of ergo, but I only get out to the Chinese grocer that carries these once a month.
Chaga is a miracle
These are my favorite kind of videos that you do, where I learn something useful and fun. ☺️ Such an honor to have Dr. G's book, pre-release. Hope you will be making a lot more of these uplifting informational videos.🌱
I’ve been hearing Dr. Greger mention that book for years! Can’t believe it’ll be out soon.
Ok. Tempeh and mushrooms. I can do that. Thank you for the very awesome video
Thanks for the great video! My mother just cooked a delicious meal with oyster mushrooms for us. Plant based for life! And congratulations with receiving the new book of Dr. Greger early. I am so jealous :-)
Mushrooms are a great source of healthy umami, that savory flavor most people get from eating meat and cheese. Other sources are miso, seaweed (like nori snacks,) nutritional yeast, some fermented foods, and tomatoes. Umami is the key to finding a fully plant based diet satisfying from a taste standpoint.
You listed my favourite foods 😍 *drinks soy sauce* 🤣
I have been putting dried mushrooms in when I make a pot of black beans. Definitely helps make the result more hearty and satisfying.
As a vegan, I eat all of those (tomatoes with the seeds and skins to avoid lectins!)!
@@Guishan_LingyouNow I know what to do with the bag that I bought!
Unfortunately a lot of people cannot eat mushrooms
Dr gregers books might be only books I would read, atleast atm. I'm not saying that you dont appreciate that, but I would be honored for that. Thanks for your video, and me for clicking it (I was quite mentally invested to vegan keto diet being the best, and I was like "not true" to your oil video.) I have been more and more into wholefoods. It is possible that I first heard the word wholefoods in your video... Thank you! 💚
Dr Greger's book "How Not to Age" will be coming out on December 5th and can be pre-ordered now.
No way! I just started growing tempeh recently since it tastes good with some sauce and the fungus also produces glucosamine and makes the nutrients in beans more bioavailible.
Can't wait for Dr Greger's book! And yay for mushrooms!
You got THE BOOK!!! You deserve it for all your good work!
There are some great recipes for mushroom stew and mushroom soup. My favorite Italian recipe with mushroom is linguine with sliced mushrooms sautéed in garlic and a little olive oil. If you don't want to use oil then Sautee the garlic and mushrooms in a little broth and add to the linguine and season as you wish. Remember stuffed mushrooms are delicious.
Pastas + mushrooms, classic.
Here's a soup that is easy to make and which I have been eating weekly for years.
A box or two of organic vegetable broth.
Add a good handful of dried porcini mushrooms. Add crushed red pepper to taste. add a dash of organic virgin olive oil.
heat slowly from cold on low medium heat to a slow simmer.
Allow to simmer, just below boiling for about fifteen minutes.
add a half cup or so of organic french lentils that have been soaking in salt water. discard water before adding lentils. You want the lentils to cook for about 25 minutes total, so at about the 15 minute mark is time to add some cut up tempeh, cut up broccoli crowns or anything else that strikes your fancy. I especially like to add purple sweet potato noodles after breaking them in half.
allow to cook an additional ten minutes.
Make sure you make enough to refrigerate and enjoy for the next few days.
To describe this dish as delicious functional food would do it no justice.
Please note that substituting other mushroom types will definitely work but will not be nearly as delicious or as high in "vitamin L.
@@SkyRiver1 This recipe sounds delicious! Thank you!
How to make that broth? Thanks
so many amazing things have been discovered through fungi, like penicillin, psilocybin (unfortunately a lot of the world still has a stigma towards it), and now compounds like this. i think over time, humanity is going to continue to realize how powerful and important this stuff really is.
Mushrooms are king
I definitely don't have a stigma against Psilo or its analogous chemicals.
@@rdallas81 I have a really good stigma towards them as a vegan. Try drying some. They're generally full of small worms or their eggs. I mean, to be specific, I don't know if they're worms, or caterpillars, or some kind of maggots etc but sure as hell they ain't plants.
Pretty sure Ergothioneine was first identified in the ergot fungus just like LSD.
Great video, Mic.
You asked about questions etc.
It would be great to know how much ergothionine is known to be desirable (I know there's no RDA) and also how much of the mushrooms or tempeh to eat to get that.
Even if you can't get to that, thank you for the videos.
I am trying to figure this out too since the levels are so variable in mushrooms. The joint pain study gave people 500 micrograms of 0.5 grams per day of Ergothioneine. So assuming 1.8 mg/g for oyster mushrooms which from one of those studies which I believe is dry weight, it couldn't hurt to just have a serving of oyster or shiitake per day. Many unknowns though!
I've just added more mushrooms to my weekly vege order. Thanks Mic!
Such a good video. Loving the way he presents the research. 💚
Many Chinese take out restaurants have some variation of something called a "Buddha Bowl." That is a savory, umami bomb that is very healthy since it is basically just veggies and mushrooms in sauce. My favorite type is shiitake mushrooms. Maybe high in sodium though. Usually comes with white rice, but would be good with noodles.
Two formulations of curcumin have been shown to cross the blood barrier. These are Longvida curcumin and CurQfen. They are able to do this because they keep curcumin in its free form, whereas other formulations of curcumin are rapidly metabolised into metabolites. These metabolites are largely inactive and their molecules are too big to pass the blood brain barrier.
ok so how does that help aging
@@addictedtochocolateandcoff9582 In lots of ways, as it helps to lower inflammation and could prevent cognitive decline.
Thanks, Mike! The potential long term health benefits of EGT sound promising. I would like to see the clinical trial data whenever it comes out and what benefits and drawbacks-if any- were observed. Until then, I will make sure to add mushrooms to my weekly grocery run!
I wonder if I can add methionine to my soil I use to grow Magic Mushrooms and it would have lots of ergothioneine? I might as well get lots of ergothioneine as I get sent off to the spiritual realm.
Thanks a lot. I am WFPB VEGAN. This week I ate about 4 times of my normal mushroom intake because of some shopping errors. So I ate about 1000g shiitake mushrooms and 600g oyster mushrooms, which is probably 4 times my normal weekly mushroom intake. But the results are great. My bloating is gone and my hair greying is reversing. Of course this week I also added 6 dried spicy peppers and a handful of fermented carrots to each meal, which should also help. This week I also double my daily exercise time in addition to my normal 1.5 hour daily walk. I think dosage is always important. God bless!
Great video Mic! Thanks!
Love the knowledge; thanks! ✌️
Thankfully I was already putting mushrooms in every meal I make, so this makes me happy.
What type of mushrooms are you putting in there? You can also incorporate mushrooms like shiitake and maitake, which are very good for your health
@@teddybearroosevelt1847 the ones I get at the grocery store, baby bella, crimini, and white button.
Wow that sounds great! Thank you so much! 😊
I've been growing Lionsmain mushrooms recently because of Derek Zarnos videos. Wish they sold them in the supermarket.
Mushrooms with black pepper and a bit of olive oil is one of my favorite meals.
Sounds like a very good mix
I question including tempeh, since (as I understand it) when cooked the fermented element it contains is killed off during cooking. I'm not gonna eat raw tempeh for any reason. Is the ergothionine something that is still present and available after cooking?
all the sources i checked said it's heat stable so doesn't get destroyed by cooking
You're confusing probiotics ("the fermented element") with the fungus (the white stuff) that contains ergothioneine. Ergothioneine is not "killed off" with cooking since it's an amino acid, else it would also be "killed off" in mushrooms that you eat.
@@eatplantsloveanimals thanks to you and Mellow for the clarification. I think I'll whip up some tempeh and mushrooms soon.
None of this longevity stuff has made it onto the wikipedia page for ergothioneine... Perhaps we should do something about that?
Thanks!
Just found your great channel and subscribed! ❤ thank you 🙌🏼
Great video as always ♥️
I love your channel so much, these videos are informative and entertaining
Excellent video, Mike! Thanks so much for all of your good work. What do you think about EGT supplements? Worthwhile?
I wish we had a study comparing supplements to mushrooms but with all of the added benefits of mushrooms I will go with mushrooms. However, if you someone is really trying to get those antioxidants ASAP then a supplement is probably best. Sometimes isolated antioxidants can backfire (Vitamin E for example) and some studies show that antioxidant pill taking in general doesn't help but maybe in this case since it is an amino acid it would be fine isolated. Great question.
Me: So I think we should be worshipping mushrooms as a god
Them: what

Them: This is just an excuse to have your house full of mushroom ornaments

20% relative risk reduction in an association study basically means the effect is too small to confidently separate from other variables, the general rule for epidemiology remains: "less than 100% difference in relative risk is not worth looking into further"
If your statement is true for this case then this is vegan propaganda science.. if the people who have higher amounts of ergothioneine in their blood eat better and more healthy divers food then this is the reason for their health not ergothioneine… what is true?
uhhh...a 100% reduced risk in mortality would be immortality. However, a 20% reduction in death from CVD for example would save like 150K lives per year in the US alone.
@@MictheVegan relative risk, ie. 50% in risk reduction. e.g. type 2 diabetics have about 1000% relative risk of getting CHD, ie. no being diabetic is associated with 90% risk reduction
20% risk reduction, or about 40% higher risk for the other group has a high likelyhood of being influenced by other variables in non-controlled studies. A higher association (100%) is generally required to even bother with mechanisms and other further research, let alone making inferences on causality.
Thank you Mic! 🥦❤
Oh my-interesting, but also overwhelming! I have been sharing videos on my CZcams channel about how our family of 4 has been able to sustain a plant-based diet for the past 14 years. Keeping it simple and eating lots of whole plant foods has been key for us.
I think you could add include mushrooms, no?

at 1:00 No, it's not unique for an antioxidant. Cysteine is a sulfur containing amino acid and plays a critical role in the tripeptide Glutathione, which is a powerful antioxidant. Often called the master antioxidant of the cell. Cysteine thiols and their oxidized disulfide counterparts are carefully balanced to maintain redox homeostasis in various cellular compartments.
8:03 bro you totally just said that with a straight face.
Thanks 👍
Cool video. Can't wait for Dr. G's new book comes out in December, I think.
Can you do a video on the benefits on sunlight? I think following a great fear about skin cancer and spending more of lives inside due to work, TV and gaming (and possibly sheltering inside due to global warming) we are missing out on the huge benefit of sunlight - we weren't evolved to be troglodytes!
I’m into tempeh and mushrooms! Woo Hoo!!! Thanks Mic💚
Eating tempeh as I watch this. Nice coincidence.
Super interesting, glad i like tempeh because mushrooms are :( …and ANOTHER REQUEST FOR YOUR INSTANT POT EBOOK PLEAAAAAAAASE
Would like to hear about latest on cancer and mushrooms, like turkey tail mushrooms. Thanks.
Would definitely be interested in following your beginner mushroom journey.
Haha
Bloating can come from lack of taurine, as it is necessary to make bile acids which are essential for proper fat and oil digestion.
It stays in the body for a while and binds to copper and zinc - could daily supplementation lead to deficiencies of those metals?
Copper shows so high for me in nutrition apps from lots of greens that it may be a good thing to help carry some of that out. Good question
I read that spirulina is a good source of ergothianine too.
What about chlorella, it changed my son miraculously
When I eat a pound (500 g) of mushrooms (shiitake and cremini) a day in the summer, I need MUCH less sunscreen. It's really significant.
Loving the curls!

Some other foods that contain it include pistachios, almonds, tofu, milk, and asparagus (I eat all of these regularly). Since fermentation is involved, I don't understand why it wouldn't also be in sauerkraut and hard cheeses that don't get heated, like cheddar.
Sup, watched a video about this on nutritionfacts channel :)
Same!
I keep watching these ergothionine videos while coincidentally eating oyster mushrooms. 😂
Can u elaborate on how to consume those mushrooms. Meaning how much damage to those vitamins is done by cooking? Do i get any effect if i buy pickled Shiitake? etc.
It's more common to find dried Shiitake. I don't know the answer re how drying changes vitamins.
@@jonahwhale9047but you'll blather on regardless hey goof?
Do we know more about how the mushrooms need to be grown to provide the larger amounts of ergothymine?
Ergothioneine (ERG) is a naturally occurring amino acid found in meat from animals that have grazed on grasses containing it.
This is making me think I ought to really find more ways to include mushrooms in my diet. I don’t eat them often. Tempeh, I don’t eat daily, but will nave up to twice a week. I wonder whether there are any other good sources of ergothionine? Would nutritional yeast have any, given that it’s also part of the fungi kingdom?
Buy a bag of dried shiitake or porcini mushrooms & just drop a couple in soups or stews when you are making them.
You can even powder up dried mushrooms and sprinkle in/on most cooking :)
I read the article about mushroom fermentation, that sounds interesting. How would one go about doing it at home?
Hi Mike!
Give me that advance copy! 😂
Very good presentation. I've been eating cheap white button mushrooms almost daily for many years. With the long half life pf ergo don't need expensive mushrooms. Coincidently a recent blood test indicate my NK cells were out of reference range high. Possible connection.
Hey Mic, why no mention of Spirulina, isn’t it literally a cyanobacteria which produces ergotheionine? Or did I miss something
Yes, spirulina is a source of ergtheionine.
Took my Seed while listening to the Seed plug, while my Kale Krush smoothie from Leafside, a brand that Dr. Greger endorses, is mixing in the background along with some supplements taken by Bryan Johnson.
When you know better, do better.
A word of caution on eating mushrooms imported from China- studies have found very high levels of heavy metals in them.

Funnily enough, so is semen. Is that a good enough reason to eat it? FWIW, you're wrong, Beef, Loin Steak = 1.33mg/kg, mushrooms = 60 and 5,540 mg/kg. Short answer, you'd be better off getting on your knees & "milking" the bull if you want an animal source of it. You're on the wrong channel.

Is there some good literature on l-Ergothioneine’s effects on autoimmune diseases?
A better way to raise ergothioneine may be to eat yogurts fermented with L. reuteri since it appears the gut biome may be the best way to raise ergothioneine. It appears to be far more powerful in raising ergothioneine than eating it from dietary sources.
Are there vegan yoghurts that use L. reuteri? How many yoghurt starters original came from animal sources, or can they also come from entirely vegan sources? Genuine question that I was never sure about.
