Three sheets to the wind means having no control over yourself. In ship talk, a sheet is the rope used to position the sails to catch the wind. "To the wind" means you've let go of it in a gail and it's flapping around out of reach... and three is all of them.

the community is actually great, but it IS an open world PVP pirate game, so you should expect literally everyone to be hostile :)
My Galleon crew spent two plus hours on another Galleon fishing as they were doing a tall tales not everyone is aggressive.
