Belichick is great at interviews but he doesn't do "fluff" which is all Fallon is. Hear him talk about actual sports; especially football and Lacrosse and he will light up.
Belichick is the only coach that watches his team score and is immediately taking notes on what they could have done better.

Watching this in 2023 after Julian has been retired for a bit now and he doesn’t have to cross his T’s and dot his I’s on and off the field for coach bellicheck, there’s a whole new Julian out there. His interviews and podcast guest spots are hilarious. As with here you see him being on edge around coach.

I felt that Coach and Edelman should've been at Jimmy Kimmel's show instead. That guy shuts up when his guests do the talking.
For talk show hosts, it would be ideal for the guests to do all the talking cause it makes the hosts job much easier (it's why talk shows love getting Kevin Hart on). But when you're interviewing someone boring like Belichick, there's more pressure on the host to force the conversation and force the comedic mood for the sake of good television

Intensity. Intensity. Intensity. That is the single most quality Belichick's face conveys. He reminds me of the serious farmer who everyone who sees coming warns the others. But with his modest acreage, he consistently brings in the biggest crop.
Intensity and PERSISTENCE for sure. Coach Belichick and the players exemplify those two qualities better than every other team. Atlanta was intense, but not as persistent.

No disrespect to Jimmy, but I don't think he deserves The Tonight Show. I think he's really funny and belongs on TV but I don't think he's a good host. It's one thing if he's still hosting Late Night but The Tonight Show is not only one of the most famous talk shows of all but one of the most famous shows of all. It deserves better in my opinion.
