  • How We Made a Passion Fruit Mead with 101 Passion Fruits! 101 passion fruits, collected, cleaned, scooped, frozen and thawed... all in a mead. That's right, Passion Fruit Mead.
    Ingredients:
    101 Passion Fruits Pulp (frozen and then rethawed)
    1 Mandarin Orange Peel
    1 Black Tea bag Steeped for Five Minutes

    If anyone does exactly as these guys instruct, you will almost guaranteed have a good drink. I don't play it half as safe with headspace, oxygenization or anything much else but i have never had a problem in 3 years. But do what they say and you will succeed :⁠-⁠) great teachers!

    Little tip for you guys, with passion fruit if you use a stick blender on the pulp it helps to break fruit away from the seeds, low speed won’t break the seeds too badly. This is a method I use as a professional chef to make passing passion fruit through a sieve easier for purées

    101 fruits is nuts. I am making a POG mead right now and had to settle for a frozen passion fruit puree since each fruit was $6 EACH. So you have yourselves a $600 mead :D

    I’m glad y’all did a passion fruit mead. Sorry that Brian didn’t like it. I love passion fruit so will likely make a mead or wine with it at some point. It’s good to know that it ferments true and without the issues that pineapple has. I saw something about pineapple recently that their is some sort of enzyme or acid (I can’t remember which right now) that causes problems when cooking with it in certain situations. One person found they were finally able to get success by using canned (not normally my preference) pineapple because the process of canning heats the fruit up to high enough temp that the (acid or enzyme) is no longer a problem. Perhaps that might work for brewing too? I think I’ll probably try it, I’d really like to do a pineapple passion fruit guava wine. Add rum and ground nutmeg after the wine is done and have an amazing rum punch!

    I've been thinking about passion fruit mead lately and this video is a great reference. Thanks for that!
    In my mind it'd be nice with dried apricots (instead of the usual and missing here raisins), but I wasn't expecting mandarin oranges, which gives me nice ideas.

    I did this, except I used my steam juicer to juice the passionfruit (listening to them pop in there was fun). It came out tasting like slightly fizzy, alcoholic grapefruit juice. We can only grow maypop type passionfruit here, but it tastes similar to the store bought fruit. One of my favorite brews!

      2 gallon plastic brew buckets (food grade) are great for primary fermentations (not great for storage or secondary tho.) I really like mine and often move it to a 1 gallon carboy in secondary, and it allows for a truly massive amount of fruit to be added to a 1 gallon batch and then pressed out to create just about 1 gallon of mead or wine for the carboy.

    Hello 👋 I have a passion fruit vine and although I like passion fruit, I get what your saying it’s just so tart if you want to make a juice out of it you need like 5 lbs of sugar (I’m exaggerating) but you get the idea that’s why if I want to enjoy it in a cocktail or as a juice I make it into a cordial which is just a simple syrup made with passion fruit which is delicious and versatile.

    Me and my gf made a gallon of passion fruit mead with just the pulp and juice, water, and orange blossom honey. It turned out incredibly well after it mellowed, with a little extra orange blossom honey to backsweeten. Didn't even need the added tannin as the fruit is powerful enough in the right quantity to linger (we used only 16 yellow parcha). Either way, you guys are in for a treat!

Can you add a tannin agent such as raisins or black tea after fermentation has started? I'm making your lemon mead but the only tea I had was Earl Grey but it had some kind of oil additive.     Loved the video guys. I absolutely love passion fruit and I make a passion fruit wine that’s amazing I leave mine at 0.992 (sorry Brian 😂) and I don’t use any tanning or orange peel. I honestly think is amazing it reminds me of a great Sauvignon Blanc from New Zealand I really like. I’ve never heard of people eating the seeds till today, I’ve only used it and seen it used for juice. Great job on this one.Btw try making it sparkling it is very good as well

      You wanna try eating the fruit straight from the shell. Sooo tangy and delicious. Just swallow the seeds whole, no need to crunch them. Or scoop it out and drizzle the whole lot onto ice-cream or meringues with cream. Omg! I’m making myself hungry.

    pro trick that i got on reddit, you can make an airlock with one of those big straws that can be bent in the middle. instead of bending it twist it one turn. same can be done with flexible air tube 3/8 or 1/2 inch. you loop it and put just enough liquid in the loop to close the way and use a bit of wire to hold the contraption in place.

    Have you guys ever thought about back sweetening with lactose sugar? It's non fermentable sugar so it won't kick off fermentation again. Also it adds a Nice creamy mouth feel. Just a thought for a future project.

      We used lactose in one of our beers. There are many choices for back sweetening. Use what works best for you and your brew.

    Yay! Passionfruit mead! I made mine with less passionfruit because I had to buy them… and it still turned out really, really nice. I added a little bit of sweetness but not much, just enough that there would be a little sweetness supporting the freshness of the fermented fruit. It’s a bit lighter in colour than yours and one of our favourite drinks on a hot summer evening. It pairs well with fish or with ‘faux fish’ dishes (crispy tofu in a sauce normally used for fish, for example), with desserts, with creamy dishes that would otherwise come across as stodgy.
    Perhaps a mead with a lighter dosing of passionfruit would suit Brian more?
    Edit: to alleviate issues with seeds/pulp, I scooped out the fruit, let the pulp sit with part of the honey for a bit (a few hours, in the fridge), then passed it through a sieve whilst stirring with a spoon. I added the resulting juice to the must. There was hardly any pulp left, mostly seeds and a few stringy bits. I’d have to check if I used pectic enzyme but I ended with a crystal clear brew.

    Hi from Belgium, I started recently to make my own wine, I still am waiting to taste the result. But I like your channel, I learn a lot. But what I wanted to say is about the erythritol. I read on a forum that erythritol get sweeter taste by aging. So you better stop a little before you think you like the taste. I myself don't have yet experience with it but I will do three different levels to test my first wine brew to find out the right dosage. To conclude, I like your brewing shows very much. 👌

    If you wanted a topic to talk over, I was doing some research on Calories and how much the yeast consumes during fermentation. I lost over 70lbs counting calories with exercise and with Brewing in my new realm of fun things to do I started gaining some back due to drinking. So today, I was doing the research on my own and I thought if I needed to know, then other people might want to as well.

      Yes, it is a rather interesting topic. There are the calories of any unfermented sugar and then the energy of the alcohol itself. Most sources state Alcohol contains around seven calories a gram - almost as many as pure fat.

    If you put pure Star San in the airlock, it will depend if the airlock manages to make it's saving throw for the outcome. If it makes a fumble, you will have Star San wine ;)

    Do you have a recipe for a standard honey/water mead that could help a newbie out? I've seen recipes that require nutrient, malic acids, sulfites, etc etc, but then I see recipes that require nothing more than honey, water and yeast.. any help would be awesome!     Another great video. How do you guys keep the erythritol from coming out of suspension? Every time I've used it I get a nice layer at the bottom of my beverages.

      It can fall out of suspension. We haven't had an issue with it but know it can happen. If your brew isn't carbonated, and you are sure the bottom layer is erythritol you can simply mix it back in for drinking.

    hello there, i have a question: if i want to preserve the bubbles of this kind of fermentation, and dunno, drink it in 6 months for example like a fresh tonic "passion fruit beer" (like ginger beer) ...i have to bottle it with a bit of sugar? something like this? It explode? it continue to ferment and change flavour?

    I wish you didn’t add the erithrotol, It appeared Derica appreciated it better before the sweetening. It looks like this was an excellent passion fruit brew. I’d love to know what varieties of passion fruit Derica planted. It sounds like passion fruit heaven

      I enjoyed it sweetened too to be honest. I think it would be lovely carbonated as well but I'm a fan of carbonation, particularly with these tart and bright tasting brews. We have the purple variety of passionfruit, specifically "Possum Purple"

    Just a suggestion but instead of cutting back on the passion fruit vines, maybe start a trade network with others for things you can use with the extra production.

    I love passion fruit. I would recommend passing it through a sieve so you can remove the seeds and end up with just juice. Could make your process a bit easier. I have never made mead with passion fruit but make a drink akin to lemonade with the juice and I eat the seeds (sorry Brian) with a touch of Tajin. Love your videos, they have helped greatly in my mead-making. Cheers!

    I’m starting my passionfruit mead today but I’m using frozen seedless pieces of passionfruit which I’m assuming is just frozen juice cubes but excited to see how it turns out

    i love passion fruit or granadilla as its called here in South Africa it might be the kind that we have here but I wouldnt say its anything like grapefruit its more similar to pineapple a tart flavour with a bit of sweetness its good in yogurt. My mother in law cant eat it because she says its too acidic but she doesn't like pinapple or lemonade or anything sour at all.

      Everyone has their own tastes! To me, pineapple is sweet, not sour, and I hate grapefruit, to me, and this is my personal taste, passion fruit tastes a bit like grapefruit. Not exactly mind you, but that's a flavor component in passion fruit to me.

      @@CitySteadingBrews totally but I also think it might be regional the pineapple we get here are sort of sweet but lean more sour and acidic only the canned pineapple comes off as really sweet too me but our granadillas are about the same level of sweetness and tart to the fresh stuff it's probably how it's grown and the specific variety that gets grown here the grape fruit we get are extremely bitter they are ok if you add sugar but not super worth it to my taste buds I'd rather spend money on oranges or lemons. But If you do like sweet fruit might I suggest trying dragon fruit in a mead it's a softer flavour but if you could find the purple/pink variety it could give the drink a really cool look.

    So you mentioned in the video that you can add pectin enzyme when mixing your must using fruit, or during secondary to help clear the Mead, but to use double the amount. So my question is can you do both? If you add it to the mix, can you add the same amount during the conditioning phase? Or is it one or the other?

    When you guys clean your stor bought fruit, do you scrub and clean, then just place in the turbos? Or do you also do a soak in white vinegar for 2-5 minutes ti allow for the skin to have all that crap removed by the vinegar?

    What did you do to fix the problem of the fruit bag floating to the top of the fermenter, preventing CO2 form escaping? I had the same problem recently when making my first mead in a 1 Gal wide mouth fermenter and ended up losing a ton of liquid because It had only been a day and I didn't want to take the fruit bag out, but it spilled liquid everywhere multiple times in a day.
