Vegetarian Haggis Recipe

  • On the 25th of January each year, Scots around the world celebrate the birthday of the poet Rabbie Burns by eating haggis. Traditional haggis is made from a sheep;s pluck - its heart, liver and lungs. These are finely chopped or minced and cooked up with oatmeal and barley, stuffed into a sheep's stomach, and cooked some more.
    Haggis is a serious bit of nose-to-tail cookery. This year, I decided to do a vegetarian haggis. This vegetable-based haggis recipe still uses the grains, and recreates the savoury, peppery flavour and texture of traditional haggis - it's actually delicious.

    Keef, I'm so touched and feel so honored that you remembered my request and actually decided to make the dish! Naturally, every haggis I've ever eaten was the traditional meaty stuff, but I'm not disappointed with your vegetarian version at all. At least people who don't like offal will not turn their noses at it. Thank you 😘

    USA-based vegetarian here. I love the celebratory butter! Have never before considered veggie haggis.

    I made this last night and hosted a little Burns Night in the catacombs of Paris with some friends. It turned out amazing and everyone was complimenting me on how delicious it was. Thank you for helping me make my first Burns Night a success!

      @@Keefcooks A year later, I am happy to bring out this recipe again. Had to have my Burns night a little early this year, but again everyone loved the Haggis. I even had people tell me they cleared out other plans just because they wanted to try my Haggis again. So thank you once more, set in the Paris catacombes, with neeps and tatties, it was a wonderful night.

    Och aye, looks amazing! I'm going to try this at the weekend. Went to Wetherspoons yesterday, but no veggie haggis version on the menu. So disappointed that I've not been able to find a veggie version even at the shops this year. We looked everywhere but grateful I've now found your recipe Keef.

    I don't know how anyone can eat the "proper" haggis, just the idea of it is enough to make me sick (and I am Scottish). I do however LOVE the vegetarian version

      a bit stupid and snobbish way of thinking, all countries have foods that are made with similar ingredients. This includes sausages, hotdogs, chicken nuggets etc. The food manufacturers are not going to waste prime cuts of meat on processed foods that sell for cheap. The only ingredient in haggis that's at all unusual is the lung, yet you'll find that most people's objection is to the stomach, when many cheeses are made with stomach extracts and sausages are traditionally made with intestines.

    I'd recommend wrapping it tighter when your first cooking it and maybe steaming it. Looks great done in oven too though.

    Aaahhh! Great Chieftan O' the puddin' race! As a piper I'm quite familiar with the ceremony surrounding Haggis. With great fanfare we would march the haggis in on a stretcher. The master of ceremony would recite Burns' poem, raise a dram of Scotch, then stab it with his sgean dubh! Warm reekin' rich! I used to make a version of this called pan haggis made from coarsely ground beef liver,kidney,heart, boiled grated onion,toasted pinhead oats,dash of nutmeg,allspice,black pepper all sauteed in a pan with a bit of beef broth to moisten, then steamed in a pudding basin. Served with a small side of roast beef and gravy,mushy peas{Batchelors' dried Marrowfats},and mashed neeps and tatties. Unfortunately,true haggis is banned in the U.S. Although, that may be lifted soon. People here are overly concerned about Mad Cow Disease.Why haven't they banned oxtails as well? It's part of the spinal system. If you can't go to your grave fat,senile and happy what good is life? I'm sorry. I tend to get lengthy.As always it's a pleasure to share with you.     This actually looks really nice! I did a video a while ago where I tried haggis for the first time, and was surprised as someone that doesn't like offal, I liked it! I like the vegetarian idea though, and I think also it could make a great pie filling too ☺

    Interesting recipe. It looked like it turned out well. I suppose if a pipe and drum band isn't available, perhaps playing something with pipes and drums in it, like Mull Of Kintyre, by Paul McCartney and Wings might suffice.

      I did a video of real haggis with a pipe and drum band playing Scotland The Brave. CZcams's copyright police were all over it in a shot and I had to take it down.

    I used to buy a vegitarian Haggis at Costco’s when they used to sell both veg/traditional, I tried both and preferred the vegetarian one over the traditional one. I have just acquired the rest of the ingredients here in Thailand and looking forward to making this dish, let’s hope it’s as good as you say it is, I will definitely respond after trying your version:-) Sept 2022

    I was unsure about this one Keef, i love Haggis but ill give you credit mate, looked delish. I'm guessing you are going to have your passport revoked when you cross the border next lol. you know how protective our Brethren of the North are about their mighty dish and rightly so. lol.       I made this 6 years ago and I haven't the slightest idea of why there's no oats - I can only imagine I followed somebody else's recipe and they didn't use oats...it was still very tasty, as I recall.

    Keef, keep it as it is, if it ain't broke etc. Can you research the northern chip shop style steak pudding with its leathery pastry which I cannot get to the bottom of, it might be suet but how do they get it like rubbery leather? John uk

      Thanks guys. If it's pudding, it will be suet - I suspect the leatheriness comes from them being kept warm for a few hours!

      KeefCooks hi, reference the chip shop pudding. They are pre cooked prior to delivery and the shop just reheats. Many Lancashire butchers shops sell them in their cold condition. What I can't find out is how the pastry is made as it doesn't look like traditional suet pastry. I suspect they are steamed to initially cook them. Naturally I've asked but needless to say "it's a secret".

      A couple reasons. Mostly because as an American, our aluminum foil comes in regular and heavy duty. So seeing a foil branded as "strong" implies that the other grade of foil is "weak." Personally I don't know why anyone would buy an foil other than the heavier grade, but when you market a line of foil as "stong" you're not leaving a whole lot of room for branding on your other product.
      Also I'd had a couple drinks and I found it more funny than it should be.

    First of all, why do we have to call dishes with vegetables, "vegetarian"...? Many countries around the world have a lot of dishes with just vegetables and they don't give titles but just the name of the dish. In America and Britain you give them the title "Vegetarian" due to those who don't eat meat or fish and they play the role of "clean, healthy and great protectors of the planet".

      Interesting. I still have the rest of this comment if you'd like me to post it. The point is very clear. If you are making a meat-free copy of a dish that traditionally contains meat then you need to clarify that this version is suitable for vegetarians. If you sold this and just called it 'haggis' I guarantee you would have complaints from carnivores and you would also have committed an offence under the Trades Descriptions Act.

      @@Keefcooks First of all let me tell you that I couldn't care less about who eats what but I get frustrated with fakes, pretentious modern trends...! I understand though, someone avoiding meat due to being allergic to it and I respect it. So..., since you have more comment for me, go ahead express yourself, otherwise keep it to send it to your "Planet Protectors" who like to eat a meat dish with a meet name but made from onions and spinach. Moreover, you can't make a "meat-free copy" as you call it, because a copy has to be exactly the same or it is not a copy. In that case, they should not be calling themselves "vegetarians" but "Hoaxarians" and they can always go and explain to these starved people in poor countries that if they had a pork chop they would turn their face away and reject it. I repeat if you have more comment for me saved somewhere in your back of your mind then be courageous and say it and I will either reply or let you feel good that you silenced me.

      I don't have more comments for you - only the last few sentences that you posted yesterday and then very quickly deleted - the ones asking me how dare I do this, or that. Y'know the first rant. You seem to be labouring under the misapprehension that I'm a vegetarian - nothing could be further from the truth which you would discover if you looked at some of my other 400+ videos. And you think I have some 'Planet Protectors'? Well, I do think the planet needs some love because we only have the one. Why would you get angry about that. And 'Hoaxarians'? I give up. I'm not here to silence you, if I was I would just delete your first comment and block you. But I haven't - I might be interested in what you have to say, but first of all you need to decide what it is, and then calm down enough to write it coherently.

    Not to be pedantic but how can it be Haggis if it's vegetarian. It's the same nonsense as there is with so called vegetarian sausages. I'm sure it tastes nice but name it something else and don't call it what it's not.

      Dude, you ARE being pedantic. It's simply a vegetarian version of something meat-based. Although I have to admit there are some oddly-named veggie/vegan copies of meaty things out there - 'praun' pad thai, 'baecon' sandwich. But they all need some explaining. Adding 'vegetarian' or 'vegan' in front of the name just helps folks understand what the thing is. I could call this something like 'Veggis', but nobody would ever search for that or understand what it is. 😀

      No, it's a vegetarian alternative to something. Either's it's a haggis, sausage or whatever it is or it isn't. You don't get to change the official definition of something when it suits you. Again don't be so lazy and come up with a more appropriate name rather than passing it off as something else. New words get invented often like d'oh, selfie etc. so I fail to see why the same can't be done in naming these new dishes. You don't need to understand anything other than it's any alternative to some other food that you don't want to eat.

      I don't care if it's the Pope's and if you're not a veggie, or if you're responsible in naming it. The point remains the same. And if you didn't come up with it and are you're now informing me that I should take it up with the Vegetarian Society then why bother being the messenger in the first place. Just keep your opinion to yourself. I'm sure there's enough vegetarians on here who are willing to speak up if they feel the need to do so.
