Love your great variety of peppers! They don't survive the cold. They need a constant 80 degrees F (26 degrees C). I live in a ski resort and I grow mine indoors too.
dry them for flakes, hot sauce, makes stews with meat, makes spray for pests and rodents, use as pain sponges apply to areas of pain, so many ways uses.

we grow a lot of peppers as well. We had around 100lbs in last years harvest. We store them in a few ways. First we smoke some in our smoker and then dehydrate them and store in vacuum bags. Others we simply dehydrate and store in vacuum bags. I take several of the smoked, dehydrated ones and grind them into a fine powder...great for chili spicing. We freeze many of them. Simply cut into strips or sections, place on a baking sheet in a single layer in the freezer and once frozen, bag them and store them in the freezer. We also make pickled peppers. So many ways to store them. Our harvest was in September, and we are still enjoying peppers stored from each of those methods. By the way, The peppers were of 5 types, grown in two rows of a total 60 square feet, all outdoors. We are at 49degree latitude, so I start indoors in February, repotting twice into deeper pots before planting out in April, under fleece. By end of May I have very strong plants. We do follow a no dig method of growing everything. NO sprays. All in beds of our own made compost. Hope that gives you some ideas of how to store them.

My grand total number of peppers harvested this year is 1😂 the weather here in England has been really bad this year and the slugs have been out in their droves nibbling away at them :( hoping for a decent summer next year 🤞

Beautiful Harvest Christopher ... I was really happy with my harvest this year too. Keep all your green peppers and they will ripen. Having all my peppers outside I had to harvest everything at once to avoid frost and have left them on the table and have been surprised at how well everything still changed. The thinner walled peppers began to dry as they ripened but still work great for powder. Good to see you my friend and as always looing forward to the next one 😁

I think most will end up as dried flakes yes. 👍 Sure! Khang is a close friend of mine. 💚
You can pickle peppers or make a relish and can them... they should last for years...

That is a great pepper harvest. Sometimes my peppers will ripen if I leave them on the counter inside.
Oh no, I missed this one! For sure, I also ripen on the counter but after a few years of doing so my wife got a bit tired hahaha! :-)
How cold does it get there in winter? If you can keep it above freezing they should survive but they won't set pods or really grow but it would give you a big head start on next season.
It gets VERY cold outside (down to at least -30 celcius), but I hope to keep it just above 0 in the greenhouse. Hoping for a great start next season yes! 😃
Fermenting peppers takes about 6 weeks easy to do

If it survives in the outdoor greenhouse this winter. I moved it out of the growroom because I had too many issues with pests. If it does survive, it will be in my first outdoor video!
