ORIGAMI COFFEE BREWER: Recipe by Du JiaNing, 2019 World Champion (Step-By-Step)

  • This is the infamous recipe designed by Du JiaNing for the 2019 World Brewer's Cup Championship using the Origami Coffee Brewer. I couldn't find too many resources online teaching this exact brewing recipe, so I decided to find the original video myself and share it all with you here.

    Here is the winning recipe in writing:
    - 16g of coffee (double ground)
    - 240 ml of water (190ml coffee)
    - Water at 94 ºC
    - 60 g of water at 6g per second for 10 seconds
    - 8 seconds wait
    - 80 g of water to 4g per second for 20 seconds
    - 18 seconds wait
    - Final pour at 5g per second to reach 240 ml

    My current recipe for a long time is single pour small Origami from Tales coffee. It brings the similar high extraction cup as hers but different a very different approach with very interesting theories.
    The strategy to better filter placement is definitely getting that stable plastic base

    I have a v60 plastic brewer and ceramic Melitta brewer #2 size. Just ordered the Origami brewer, medium size.

    Heyy! I know it's been a while since this video's been around.
    Was the kalita 155 or 185 filter used ? It looks to mee like the 155 but I'm not certain.

    I modded my SS kalita wave brewers so that there is VERY little material on the bottom (3 slim parta connected in the middle of the brewer) Only enough to hold the filter really, there is almost zero resistance from the brewer itself.
    Very much inspired by the Kaley Gann custom brewer “K90” in the 2019 US brewers cup.

    Thank you to your brewing method ! If you use grinder commandante , how Many clicks to use this method ? Thank you to your answer

      Hey, I'm not sure, I don't have a commandante, but it's also important to change the grind size depending on the coffee you're using, so I can't recommend click numbers..
