    Seeing Taku shave a coconut like that really reminded me of my childhood. I'm Southeast Asian, but born in Canada. Growing up, we had a little bench similar to that and I would sit and shave the coconut while my mom was prepping food. The nostalgia hit me so hard!!

    WOW That might be my favorite video ever. The warmth of everyone was so heartfelt. The food made me so so hungry. The coconut cream dish was the one that stood out for me. I would love to go to New Zealand and Australia just because of what I have seen of the people that live there. Good job Taku

    About 2 years ago, I had my first taste of wahoo sashimi. I’ve never had wahoo any other way since. I still won’t say no to a grilled steak though. Truly an amazing fish. Aggressive strikes and they can strip your line in seconds. Beautiful too.

      They can. I always used 300lb mono trace and rarely if ever lost a lure to ono. Big marlin yes but because they died and sank. Smaller 250 under no prob. Always sad to lose one from heart attack just didnt have te equipt and was not targetting that size. Caught a 60lb cuda ten minutrs later at same 1/4 mile offshore. And caught a Black that true to form charged our boat hitting 20 yrs off stern. Got him but boy scary. Actually mahi worst. My buddy got 2 each 12'0s through his calf . My calf would have broke. He cut tge line and said keep fishing till we got to dock and bolt cutters. Thank god for beer.

    Damn, that was a high wire act! First you almost knocked the cleaver off the table, then you risked impaling yourself getting the husks off the coconuts. I love how the fishing was such a minor part of the video. The prep, the cooking and in this case the interaction with the people of the Island was special.

    Makes me proud to be Samoan cause Ota or Oka is also a staple and a national Samoan dish! Pretty sure Niue is closely related to Samoa as far as language & culinary. Good stuff taku! You should stop by in Samoa!

      As the story goes Tongans and Samoans were the first people to arrive on Niue. I think Tongan is more similar to the language as far as I know, but yes you are correct.

    In Cambodia after extracting the cream out of the coconut meat, we would mix it with palm sugar or or brown sugar or any sugar to your liking and frying on frying pan without oil until it turns brown. You can eat it the way it is or you can sprinkle it on the rice balls and eat them with your fried fish.

    Loved it, reminded me of home (Tonga) growing up there as a kid. Grated countless number of coconuts. 'Ota is Tongan as well for raw fish dish in coconut cream, polo (red hot pepper), lime juice, green onion, cucumber and tomato, my favourite dish. Taku learned it real fast on the island and can fit in nicely as a local. The Niuean language is most closely related to Tongan than any other Polynesian languages. In fact, "Tongan and Niuean form the Tongic subgroup of the Polynesian languages. Niuean also has a number of influences from Samoan and Eastern Polynesian languages."

    Oh man, I remember using a tool similar to that when grating coconuts as a kid. My mom would always let me help her make various Filipino desserts, and one key thing would be grating coconut. Good times

    I’m a professional chef down here in Nola, I go fishing all the time for specs, redfish, sheepshead, flounder. I’ve yet to land a wahoo but I will one day. It’s my absolute favorite fish to eat from the sea

    27:50 / 31:22 I can tell the taste by watching. It's a similar recipe here in the Philippines called "kinilaw", our local version of ceviche. Especially in the Visayas and Mindanao regions. Where some parts of the regions also add coconut milk or even fresh milk onto the coconut vinegar which it's acidity cooks the raw fish. Yum!

    Taku next time you get the chance try and find a brown sprouted coconut that's not too far along, if you find one go ahead and open it up and you'll find a coconut within the coconut it's really tasty if you get it just right we call it Hawaiian candy

      Yup. We call it "sponge". Exactly like cotton candy. Raw or cooked with coconut milk. Surprised more chefs dont use it as unique.

    Replace that cucumber and green onions with cilantro and habanero pepper. Add a little bit of garlic and that’s it. You got a Peruvian ceviche. (Of course with salt & pepper).

    We do this a lot traditional here in Philippines just like that one.. maybe the local there were also Filipino because they did use the old equipment for grating the coconut just like we have here.

    You should try doing a video in the 10,000 islands in the Everglades. If you go with a charter who knows his stuff you can end up coming back with 5 different species in a matter of hours on a good day, would make for a sweet episode!

    Have found that, if you use coconut water from young green coconuts, combined w/older coconut "meat"...results in sweeter tasting coconut cream. When combined w/arrowroot or tapioca flour & heated until high simmer, poured into regular cookie sheet pan or 6x6 brownie/cake pan & chilled, overnight is preferable...VOILA/TADA=Hawaiian haupia "pudding!"
